Mexican Black Bean, Corn, Capsicum and Avocado Salad


It looks nicely colourful and it's delicious. You can serve it as vegetarian meal or side dish / salad. Would look good on Christmas table too!

Ingredients:
2 cans black beans  (or 1 cup dry, presoaked, cooked), rinsed
1 cup corn kernels (frozen OK), cooked
1 red capsicum, diced
1 red chilli( long/mild), diced
4-6 spring onions, sliced (or 1 Spanish onion, diced)
1/2 bunch coriander leaves, sliced
1 lime, juice and zest
1/3 cup olive oil
2 avocados, diced
salt, sugar and pepper to taste
cayenne pepper (optional) to taste 

Method:
Mix all ingredients (except avocado) 2-3 hours before serving, season and leave in fridge. Just before serving, dice avocado and mix in. Enjoy!



Meksička Grah Salata sa Avokadom, Kukuruzom i Paprikom 

Izgleda lijepo saroliko i pikantna je. Mozete je servirati kao vegetarijanski obrok ili kao prilog / salatu. Izgledala bi lijepo i na Bozicnoj trpezi.

Potrebno:
2 konzerve crnog graha (ili 1 solja suhog, natopljen i skuhan), ispranog
1 solja kukuruznih zrna (smznuti mogu), skuhani
1 crvena mesnata paprika, sjeckana na kockice
1 cili papricica, crvena blago ljuta, sjeckana
4-6 kom. mladog luka, sjeckana (ili 1 ljubicasti luk, sjeckan)
1/2 vezice korijander lisca, sjeckano
1 limeta, sok i ribana korica
1/3 solje maslinovog ulja
2 avokada, sjeckan na kockice
so, secer i biber prema ukusu
kajen biber (opciono) prema ukusu

Nacin:
Pomijesajte sve sastojke, osim avokada, na 2-3 sata prije sluzenja i zacinite. Promijesajte i ostavite u frizider. Neposredno prije sluzenja isijecite avokado i umijesajte laganim pokretima. Sluzite i uzivajte.

Tuscan-Emilian style Polenta


Beautiful Italian dish; complete meal if served with a salad.

Ingredients:
2 l boiling water
1 tbs sea salt
300 g coarse grain cornmeal - polenta
1 tbs extra virgin olive oil
300 g fresh Italian pork sausage (or Kransky), crumbled
90 g bacon, chopped
1/2 tbs rosemary, chopped
1 clove garlic, chopped
4 tbs Parmesan cheese, freshly grated
Method:
Cook thick polenta from first 3 ingredients (microwave method is OK). Switch oven to 200*C.
Oil a baking dish, large enough to contain polenta layer of 2,5 cm. Pour polenta into the dish, and smooth surface with a spatula.
Mix sausage meat, bacon, rosemary and garlic with a fork in another bowl.
Cover polenta with this mixture, gently pushing with your fingertips. Bake 15 min at 200*C. Before serving sprinkle with Parmesan cheese.

Palenta Taskan-Emilia Regiona

Potrebno:


2 l vode, vrele
1 K soli (morska)
300 gr palente
1 K djevicanskog maslinovog ulja
300 gr svjezih Italijanskih kobasica
(ili Kranjske), izmrvljene
90 gr slanine, sjeckane
1/2 K ruzmarina, sjeckanog
1 ceno bijelog luka, sjeckano
4 K Parmezana, svjeze ribanog
Nacin:
Skuhajte gustu palentu od prva 3 sastojka. Nauljite vecu posudu (kao za pizzu) i uspite palentu u nju, zaravnite malo; sloj treba da bude debljine 2,5 cm.
Ukljucite rernu na 200*C.
Pomijesajte meso kobasica, slaninu, ruzmarin i bijeli luk viljuskom.
prekrijte sa ovime povrsinu palente, lagano utiskujuci smjesu prstima. Pecite 15 min na 200 *C. Prije serviranja pospite ribanim Parmezanom.

Beans and Corn Salad with Capsicum and Onion


The heat of summer has arrived in my City, and that means I will spend as little time cooking/baking as possible. Meals will mostly consist of combined ingredients and BBQ. One of 'combined-ones' is this salad; it contains complete protein and good carbs, so it is all-in-one meal. Perfect for vegetarians. It takes 5 minutes to make it.

Ingredients:
2 cans of red kidney beans
1 can of corn
1 Capsicum, red, diced
1-2 Spanish onions, diced
2-3 tbs olive oil
1-2 tbs Balsamic Vinegar
salt and pepper to taste
Method:
Drain cans; combine all ingredients, mix well. Season according to your taste.

Grah/pasulj i kukuruz salata sa paprikom i lukom

Kada vrucine nastupe u mom gradu, uglavnom izbjegavam da kuham. cesto se obroci sastoje od 'kombiniranja' namirnica. Ova salata ima sve neophodne nutricionalne vrijednosti u jednom, a gotova je za svega 5 minuta.

Potrebno:
2 konzerve crvenog graha
1 konzerva kukuruza
1 crvena paprika, mesnata, iskockana
1-2 Spanska (ljubicasta ) luka, iskockana
2-3 kasike maslinovog ulja
1-2 kasike Balzamickog sirceta
so i biber prema ukusu
Nacin:
Ocijedite konzerve. Pomijesajte sve sastojke; dotjerajte ukus.

Corn Bread


This recipe is used in many countries of Balkan.

Ingredients:
3 small eggs, beaten
1 teas salt
3 tbsp oil
1 cup yogurt
1/2 cup mineral sparkling water
1 cup corn flour (fine polenta)
1 cup SR flour
Method:
Mix all ingredients well, pour into greased / dusted bread tin, and bake 35-40 min on 180*C.

Proja / kukuruzni hljeb

Potrebno:
3 manja jaja, umucena
1 kasicica soli
3 kasike ulja
1 solja gustog jogurta / kiselog mlijeka
1/2 solje kisele vode
1 solja kukuruznog brasna, sitnije od palente
1 solja samodizajuceg brasna
(ako ne mozete kupiti - napravite: 1 solja obicnog brasna + 1,5 kasicica praska za pecivo)
Nacin:
Sastavite sve sastojke i dobro izmijesajte. Uspite u kalup, namascen i pobrasnjen; pecite 35-40 minuta na 180*C.
