Mexican Black Bean, Corn, Capsicum and Avocado Salad


It looks nicely colourful and it's delicious. You can serve it as vegetarian meal or side dish / salad. Would look good on Christmas table too!

Ingredients:
2 cans black beans  (or 1 cup dry, presoaked, cooked), rinsed
1 cup corn kernels (frozen OK), cooked
1 red capsicum, diced
1 red chilli( long/mild), diced
4-6 spring onions, sliced (or 1 Spanish onion, diced)
1/2 bunch coriander leaves, sliced
1 lime, juice and zest
1/3 cup olive oil
2 avocados, diced
salt, sugar and pepper to taste
cayenne pepper (optional) to taste 

Method:
Mix all ingredients (except avocado) 2-3 hours before serving, season and leave in fridge. Just before serving, dice avocado and mix in. Enjoy!



Meksička Grah Salata sa Avokadom, Kukuruzom i Paprikom 

Izgleda lijepo saroliko i pikantna je. Mozete je servirati kao vegetarijanski obrok ili kao prilog / salatu. Izgledala bi lijepo i na Bozicnoj trpezi.

Potrebno:
2 konzerve crnog graha (ili 1 solja suhog, natopljen i skuhan), ispranog
1 solja kukuruznih zrna (smznuti mogu), skuhani
1 crvena mesnata paprika, sjeckana na kockice
1 cili papricica, crvena blago ljuta, sjeckana
4-6 kom. mladog luka, sjeckana (ili 1 ljubicasti luk, sjeckan)
1/2 vezice korijander lisca, sjeckano
1 limeta, sok i ribana korica
1/3 solje maslinovog ulja
2 avokada, sjeckan na kockice
so, secer i biber prema ukusu
kajen biber (opciono) prema ukusu

Nacin:
Pomijesajte sve sastojke, osim avokada, na 2-3 sata prije sluzenja i zacinite. Promijesajte i ostavite u frizider. Neposredno prije sluzenja isijecite avokado i umijesajte laganim pokretima. Sluzite i uzivajte.

Fruit, Nut and Avocado salad


It is HOT today...40*C...which means salad for lunch!

Salads are often complete meals during summer in my household. We go creative with fridge ingredients; everyone adds what they like. Boys usually want something meaty (salami, ham, tuna...) while I prefer some fruit and nuts in it. Nice fresh dressing over it, and I don't need anything better.
What sort of salads do you like?

Ingredients: (for 1 person)
1-2 handfuls of salad greens (mixture)
1/4 avocado, sliced
3-5 strawberries, sliced
2-4 tbs walnuts, chopped

Orange  Dressing (for 2-4 servings)
1 orange, juice + a bit of zest
4-5 tbs olive oil
pinch of pink salt
1 tsp mustard
1 tbs parsley leaves, chopped (optional)

Mix all ingredients, pour with orange dressing over it. Enjoy!


Salata sa avokadom, vocem i orasima

Danas je VRUCE...40*C...sto znaci salata za rucak!
Salate su ceste za obrok tokom ljeta u mom domacinstvu. Postajemo kreativni sa sadrzajem frizidera; svako ubacuje u svoj obrok ono sta voli.Decki obicno zele nesto 'mesno' (slama, sunka, tuna...) dok ja volim voce i orasaste plodove u salati. Fin preljev preko, i meni ne treba nista bolje.
Kakve salate vi volite?

Potrebno: (za 1 osobu)
1-2 sake mijesaneih listova salate
1/4 avokada, izrezan
3-5 jagoda, izrezane
2-4 K oraha, sjeckanih

Preljev sa sokom narandze (za 2-4 salate)
1 narandza, sok + jos malo ribane korice
4-5 K maslinovog ulja
prstohvat (pink) soli 
1 k senfa
1 K lisca persuna, sjeckan (opciono)

Pomijesajte sve sastojke, pospite sa preljevom. Uzivajte!

Simple Celebration Dinner



I had big plan for my 4-th anniversary (21st May) and 500 000 visits to my blog, which collided almost same day. Unfortunately, mother nature had her last word - flood in Bosnia happened and I didn't have any desire to celebrate. I was in my birth town with my thoughts and hart, feeling for my friends and family who had to suffer again.
Instead of that, here is suggestion for simple seafood dinner, which happened on 1/5 (Labor day in Europe; still very much celebrated).

Jednostavna  vecera za proslavu

Imala sam velike planove za moj 4-ti 'blogorodjendan' (21/5) i 500 000 posjetitelja, koji su se gotovo na isti dan susreli. Na zalost, majka priroda je imala zadnju rijec - poplave su se desile i ja naprosto nisam imala volje za bilo kakav znacajniji post. Mislima i srcem sam bila u mom rodnom kraju, osjecajuci za prijatelje i rodbinu koji su ponovno patili.
Umjesto toga, evo prijedloga za jednostavnu veceru sa morskim plodovima (koja se desila 1/5)

Spiced lentil salad, Indian style


Huh,...it's not easy surviving holidays. Days of eating heavy food, rich cakes and drinking...After that, I always feel I need a few days of light / vegetarian food and a lot of plain water in order to detoxify my body. Here is one suggestion - Indian style!

Ingredients:
2 tbs oil (olive)
1 large onion, diced
2 garlic cloves, crushed
2 tsp cumin powder
1 tsp coriander powder
1 tsp mustard powder
1 cup green lentils
1 1/2 cups chicken stock (or vegetable)
4 shallots, sliced
1 red chilly, sliced
1 green chilly, sliced (optional)
1 tbs pomegranate molasses
1 tsp salt
1/2 tsp black pepper powder
1/2 cup coriander leaves, chopped
1/4 cup Italian (flat leaf) parsley, chopped
Method:
Heat oil and saute onions for a minute; add garlic, all powders and lentils. Mix well, then pour stock, cover and cook for 40 minutes. When lentils cooked but still firm, transfer to a large bowl.
Mix in shallots, chilly, molasses and herbs. Add salt and pepper and mix well. Sprinkle with some coriander leaves and enjoy. (Taste develops better after a couple of hours.)



Pikantna salata od zelene lece / sociva na Indijski nacin


Sva sreca pa nije potrajalo duze... Dani svakodnevnog gozbovanja, neodoljivih slatkisa i alkohola... Poslije praznika uvijek pozelim nesto lagano ili vegetarijansko; osjecam da moje tijelo to trazi, kako bi se detoksificiralo. Ovo je jedan od takvih recepata - u Indijskom stilu!

Potrebno:
2 K ulja
1 veci crveni luk, sjeckan
2 cena bijelog luka, protisnutog
1 k koriandera u prahu
2 k kima u prahu
1 k senfa u prahu
1 solja zelene lece
1 1/2 solja pileceg / povrtnog bujona
4 mlada luka, sjeckana
1 ljuta papricica, sjeckana
1 K molase od nara / sipka
1k soli
1/2 k crnog bibera, mljevenog
1/2 solje lisca korijandera, sjeckanog
1/4 solje persunovog lisca, sjeckanog
Nacin:
Zagrijte ulje, proprzite crveni luk, zatim dodajte bijeli luk i sve zacine u prahu. Zalijte supom, poklopite i kuhajte 40 minuta. Leca treba da je kuhana, ali neraspadnuta.
Prebacite socivo u vecu posudu, dodajte mladi luk, molasu, i ostalo bilje. Promijesajte dobro. Pospite jos malo koriandera po povrsini i uzivajte. (Nakon par sati, salata postaje ukusnija, jer se svi sastojci bolje razviju.)

Cous-cous Salad



Cous-cous is so easy to prepare! I always have a box of cous-cous in my pantry, and whenever I don't know what to serve as a side dish, I make cous-cous.
Fresh vegetables and herbs are perfect  companions in a salad.

Ingredients:
1 cup of cous-cous (1 cup of boiling water for it, salt, pepper)
salad vegetables (tomatoes, cucumber, capsicums...), diced
2 green onions, sliced
1/2 bunch of parsley leaves, chopped
2-3 tbs olive oil
1-2 tbs lemon juice
1 clove garlic, crushed (optional)
Method:
Pour boiling water over cous-cous, cover and let it stand for 5-10 minutes, then fluff it up with fork, seasoning to your taste.
Dice and slice all vegetables and herbs. Mix it with cous-cous and dress with olive oil and lemon juice.
Perfect with grilled meat.


Kuskus salata

Kuskus je tako zahvalan za imati u kuhinji. Kad god ne znam sta da napravim za prilog, ja posegnem za kuskusom. Brzo i lako, odlicno za iskoristiti povce i zacinsko bilje iz frizidera.

Potrebno:
1 solja kuskusa (prelivena sa 1 soljom kljucajuce vode, so, biber)
salatno povrce (paradajz, krastavci, paprike...)sjeckano na kockice
2 mlada luka, sjeckana
1/2 sveznja persunovog lisca, sjeckana
2-3 K maslinovog ulja
1-2 K soka limuna
1 ceno bijelog luka, protisnuto (po zelji)
Nacin
Prelijte kljucalu vodu preko kuskusa; pokrijte i ostavite 5-10 minuta. Viljuskom 'grebite' dok ne odvojite zrnca; zacinite po ukusu.
Isjeskajte sve ostale sastojke, pomijesajte sa kuskusom i prelijte maslinovim uljem i sokom limuna.
Najbolje sluziti sa pecenim (grilovanim) mesom.

Ecuadorian Mango Salsa


For  mango lovers!
Ingredients:
1 medium  Spanish onion, diced
1 tsp salt
2 firm mangoes
1 orange or red  capsicum
1 large chilli (not too hot), chopped
2-3 tbs finely chopped parsley
Juice of 1 orange
Juice of 1 lime
1 tsp cumin powder
Method:
Sprinkle onion with salt, let it rest for 15 minutes.
Dice mangoes and capsicum; mix with parsley and chilli. Rinse onion and add to the mixture. Stir citrus juices and cumin; pour over the salsa. Mix well.
Best served with fish and seafood. (Fish in the photo is corn-flour coated bassa fillet, shallow fried)



Ekvadorska Mango Salsa

Za ljubitelje manga!

Potrebno:


1 Ljubicasti luk, sjeckan na kockice
1 k soli
2 cvrsta manga
1 narandzasta ili crvena paprika
1 mala papricica (ne preljuta)
2-3 K persunovog lisca, sjeckanog
sok 1 narandze
sok 1 limete
1 k kima u prahu
Nacin:
Pospite luk sa solju, ostavite po strani 15-ak minuta.
Isjecite mango i papriku. Umijesajte persin i pIsperite luk vodom, ocijedite pa umijesajte i njega. Sastavite sokove citrusa, ubacite kim i promijesajte. Pospite ovo preko salse i promijesajte.
Najbolje servirati sa ribom i morskim plodovima. (Filet ribe na slici je uvaljan u kukuruzno brasno i isprzen)

Ambrosia Salad


Great refreshing, exotic salad!  Best served with grilled fish or meat; but good enough as a dessert. Following recipe has only 4 ingredients, although there are recipes that call for marshmallows, grapes, cherries and nuts. I find that this basic combination works best for me.

Ingredients:
Mandarins, canned or fresh, cut into small pieces
Pineapple, canned or fresh, small pieces
Coconut, shredded
sour cream
(you will need  the same amount of each, or to your preference)
Method
Mix all ingredients. Enjoy!

Salata 'Ambrozija'

Divno osvjezavajuca, egzoticna salata. Najbolje ju je servirati sa ribom ili mesom sa grila / rostilja, ali je sasvim dobra i kao desert. Sljedeci recept se sastoji od samo 4 sastojka, mada postoje rezne verzije koje traze jos i dodatak sitnih marsmalova, grozdja, tresanja i orasastih plodova. Za mene licno, ova osnovna kombinacija je najbolja.

Potrebno:
Mandarine, konzervirane ili svjeze, sitni komadici
Ananas, konzervirani ili svjezi, sitni komadici
Kokos ribani
Kajmak / vrhnje / pavlaka (35% masnoce)
(podjednake kolicine ili prema vasem ukusu i zelji)
Nacin:
Pomijesajte sve sastojke. Uzivajte!

Satay Beef Salad ...or...My oven - episode 3


My oven door 'exploded'!...It went down in a million little pieces; and it's not first time - 
a year ago it happened already... The front (external) door simply broke for no reasons, leaving only internal glass attached.  Now I'm  in search for another  part  (again)....grrrr!
NOT HAPPY 'Whirlpool' / Ikea!

 Ingredients:
1 Large slice of rump steak (salt, pepper, oil for grilling)
1 Spanish onion, sliced
1 medium carrot, grated
1-2 cups bean sprouts
small bunch of coriander leaves, roughly chopped
10-15 sugarsnap peas (mangetout) , sliced diagonally
Satay sauce dressing-
1/2 tbs oil
1/2 tbs red curry paste
1/3 cup peanut butter
1/2 can coconut milk
juice of 1/2 lime
1 tsp brown (or palm) sugar
a bit of fish sauce or salt to taste
(or, use commercial satay sauce
Method:
Make sauce first, if you're not using already prepared.
Heat oil, fry curry paste for 30 sec, then add coconut milk and peanut butter. Mix well, bring to boil and take off of heat. Mix in fish sauce, sugar and lime juice.
Grill or pan fry seasoned steak, leaving it slightly pinky inside; let it rest.
Meanwhile, mix all sliced ingredients for salad, place it into a shalow dish. Place sliced steak on top of salad and pour satay dressing. Enjoy!







Satay Salata sa Ramstekom...ili ...Moja rerna - epizoda 3

Vrata  moje rerne su eksplorirala!...Rasula se u milion malih djelica, i to nije prvi put- prije godinu dana se to vec jednom desilo...Prednja (spoljna) vrata su jednostavno popucala bez ikakvog razloga, ostavljajuci samo unutarnje staklo u okviru. Eto sad sam u potrazi za jos jednim dijelom (opet)...grrr!
NISAM ZADOVOLJNA 'Whirlpool' / Ikea!


Potrebno:
1 veci ramstek (so, biber i ulje za pecenje)
1 ljubicasti luk, sjecen na rebarca
1 srednja mrkva, rendana
1-2 solje izdanaka graha / boba
mali svezanj lisca korijandera, krupno rezanog
10-15 mangetout mahuna (pljosnate), rezane dijagonalno
Satay preliv-
1/2 K ulja
1/2 K crvenog karija
1/3 solje kikiriki maslaca
1/2 konzerve kokosovog mlijeka
sok 1/2 limete
1 k braon (ili palminog) secera 
malo ribljeg sosa ili so prema ukusu
(ili, koristite gotovi satay sos)
Nacin:
Najprije napravite satay sos, ako ne koristite gotovi.
Zagrijte ulje, proprzite kari, dodajte mlijeko i maslac. Promijesajte dobro, pa zacinite sa ostalim sastojcima.
Zagrijte tavu i ispecite meso, ostavljajuci ga blago ruzicastim unutra. Neka se odmori.
Pomijesajte sve sastojke za salatu i stavite na vecu, plitku posudu. Izrezite meso na trake i poredajte ga preko salate. Prelijte pripremljenim sosom. Uzivajte!

Mediterranean Cous-Cous Salad for a Special Party



It was my friend's (Sneza) birthday!
Best compliments to her family for organising such a perfect party - I had so much fun! Theme was '1001 night'. Food was great - I took only a few pictures, and so was entertainment...boys did excellent job!
I was asked to make Mediterranean Cous-cous salad...



Ingredients (for a large salad):
2 cous-cous packs (500 g each)
2 medium eggplants, cut into matches
(salt, pepper, flour and oil for frying eggplants and zucchinis)
2 zucchinis, matches
2-3 spring onions, sliced
1-2 red capsicums, from jar, cut into small pieces
1 jar (250-300 g) sun dried tomatoes, drained
2 small jars artichokes, drained
1 jar pitted Kalamata olives (350g+), drained
salt and pepper to taste
olive oil
Favorite herbs (parsley, oregano, mint, thyme, basil...)roughly chopped
Method:
Prepare cous-cous according to instructions on packet. Keep it aside.
Season eggplant and zucchinis with salt and pepper, dust with flour. Fry until golden; take out on absorbent paper.
Mix all other ingredients with cous-cous add fried vegetable. Season to your taste. Dress with herbs and olive oil.



Mediteranska Kus-kus salata

...napravljena za moju prijateljicu Snezu i njen rodjendan. Sve pohvale njenoj kcerki i ostalim clanovima porodice za organizovanje tako perfektne i zanimljive zabave - meni je bilo SUPER! Tema je bila '1001 noc'; hrana (uspjela sam slikati samo dio toga) i zabaljaci fenomenalni - bravo decki!

Potrebno (za veliku ciniju salate):
2 pakovanja kus-kusa (500 gr svako)
2 srednja patlidzana, sjecena kao pomfrit
2 tikvice, isto sjecena
(so, biber, brasno i ulje za przenje gore navedenih)
2-3 mlada luka, sjeckana
1-2 crvene paprike, kisele, sjecene
250-300 gr polususenog paradajza
2 manje tegle articoka
1 (350 gr) tegla Kalamata (Grckih) maslina
so i biber prema ukusu
maslinovo ulje
Zacinsko bilje (persun, bosiljak, majcina dusica, origano, nana...)
Nacin:
Pripremite kus-kus prema instrukijama na kutiji.
Posolite i pobiberite patlidzan i tikvice, protresite u kesi sa brasnom, pa przite u ulju dok ne porumene. Izvadite i stavite na upijajuci papir.
Pomijesajte sve ostale sastojke sa kus-kusom i przenim povrcem. Zacinite prema ukusu, zatim pospite zacinskim biljem i maslinovim uljem.

Arabic Salad with Grilled Rump Steak



'Salata Arabia' is popular in Levant area (Israel and Palestine, Lebanon, Iraq, Eastern Turkey, Jordan and Syria). My son got this recipe from his school friend; original recipe doesn't include avocado.

Ingredients:
Rump (or other steak) for grilling (salt and pepper for seasoning, oil for brushing)
Salad-
3-4 small cucumbers, diced
2-3 tomatoes, diced
3-4 spring onions, sliced; or 1 large onion, diced
mint leaves, small bunch - thorn
parsley leaves, thorn
yellow capsicum, diced (optional)
Avocado (optional), diced
Dressing-
1 lemon, juice
1-2 tbs olive oil
1/2 tsp cumin
1/3 tsp salt
1/3 tsp pepper
Method:
Grill steak to your liking; keep warm.
Mix all ingredients for salad. Shake ingredients for dressing in a small jar; pour over salad. Serve on a warmed plate.
* If you use avocado, cut it in half and use skins for serving.

... poznata salata Levant erije.

Recept je dobio moj sin od skolske prijateljice. Originalni recept ne trazi avokado u sastojcima.

Potrebno:
Ramstek (ili drugo meso) za rostilj (so i biber za zaciniti + ulje za premazati)
Salata-
3-4 manja krastavcica, sjeckano na kockice
2-3 paradajza, kockice
3-4 mlada luka, sjeckana; ili 1 veci crveni, kockice
1 manji svezanj lisca mente / nane, iskidani
malo lisca persuna, iskidani
zuta paprika, kockice (po zelji)
avokado, kockice (po zelji)
Preljev-
1 limun, sok iscijedjen
1-2 K maslinovog ulja
1/2 k kima
1/3 k soli
1/3 k bibera
Nacin:
Ispecite meso na rostilju na nacin koji vi zelite; cuvajte na toplom.
Pomijesajte sve sastojke za salatu. U manji galon / teglu stavite sastojke za preljev i protresite. Prelijte preko salate. Servirajte zajedno na zagrijanom tanjiru.
* Ako koristite avokado, presijecite ga na pola i sacuvajte koru za serviranje salate.

Basic Potato Salad

This type of salad is mostly served in Mediterranean countries. It's easy to prepare and makes perfect accompany with fish.

Ingredients:
4-6 potatoes (one large for each person - red ones are the best)
350 g green beans
salt and pepper
1 garlic clove, crushed
Olive oil and white wine winegar (3-4:1)
parsley leaves for garnishing
Method:
Peel and cook potatoes and beans. Slice potatoes, mix with beans. Pour olive oil and vinegar into a jar; salt and pepper to taste, add garlic and shake well (I prefer 4 parts of oil to 1 part of vinegar). Pour this dressing over the salad; garnish with parsley leaves. Enjoy warm or cold.
To this salad you can add anything from your fridge (hardboiled eggs, olives, onion, mayonese, other herbs...)





Osnovna krompir salata

Potrebno:
4-6 krompira (crveni - jedan veliki za svaku osobu)
350 gr mahuna
so i biber
1 ceno bijelog luka, protisnuto
maslinovo ulje i vinsko sirce (3-4:1)
lisce persuna za posuti
Nacin:
Skuhajte oguljeni krompir i mahune. Izrezite krompir, pomijesajte sa mahunama. Uspite ulje i sirce u teglu (Ja uvijek koristim 4 dijela ulja prema 1 dijelu sirceta), zacinite solju i biberom; dodajte bijeli luk. Dobro protresite teglu, pa prelijte ovo preko salate. Pospite persunovim liscem.
Sluzite toplo ili hladno.
Ovoj osnovnoj salati mozete dodati bilo sta iz vaseg frizidera (kuhana jaja, masline, luk, majoneza, drugo zacinsko bilje...)

Greek Salad + Awards



Ingredients:
Salad-
4 egg tomatoes, cut into wedges
2 Lebanese cucumbers, halved lengthways, sliced
1 red capsicum, halved, deseeded, thinly sliced
1 red onion, quartered, each quarter cut into thin wedges
250g kalamata olives
300g Greek feta, cubed
Dressing-
3 tbs extra virgin olive oil
2 tbs lemon juice
pinch of salt
Method:
Mix all salad ingredients well. Shake dressing ingredients in a jar, pour over salad. Serve on a bed of salad leaves (optional) and /or with crusty bread.

Grčka Salata

Potrebno:
Salata-
4 paradajza, izrezana na reznjeve ili vece kocke
2 krastavca, prepolovljena i izrezana
1 crvena paprika, izrezana tanko ili na kocke
1 ljubicasti luk, rezan sitno na reznjeve
250 gr crnih maslina
300 gr Grcke fete, rezane na kocke
Preliv-
3 K djevicanskog maslinovog ulja
2 K soka limuna
prstohvat soli
Nacin:
Pomijesajte sve sastojke za salatu. Sastojke za preliv muckajte u zatvorenoj tegli, pa ovime prelijte salatu. Servirajte preko listova zelene salate (po volji) i/ili sa nekim rusticnim hljebom / kruhom.

Waldorf Salad


First created between 1893 and 1896 at the Waldorf Hotel in New York City. I got this recipe in 1992, when I was appointed as a 'housemeister' (housekeeper) in an Austrian noble family! Original recipe did not call for nuts / grapes.

Ingredients:
2 green apples,peeled, julienned
1 celeriac, peeled, julienned (or 2-3 stalks celery, finely chopped
100 g finely chopped Walnuts
1-2 small bunches white grapes, halved if too big
mayonnaise, to your liking (should be 'neutral' - not to salty)
Method:
Mix all ingredients. Adjust the amount of your favorite ingredients according to your liking.
Serve as entree, side salad (meat and fish), or dessert salad.



"Waldorf"  (Valdorf) SalataKreirana izmedju 1893-1896 u Njujorskom Waldorf Hotelu. Originalni recept nije sadrzavao orasaste plodove i grozdje!

Potrebno:
2 zelene jabuke, oguljene i isjecene na tanke prutice
1 korijen celera (prutici), ili 2-3 stabljike sjeckane sitno
100 gr oraha, sjeckanih
1-2 grozda bijelog grizdja, velike bobe prepolovljene
majoneza koliko zelite (neutralnog ukusa - ne slana)
Nacin:
Pomijesjte sve sastojke, umijesajte majonezu u kolicini koju zelite.
Odlicno uz meso ili ribu.
Servirajte kao predjelo, salatu ili desertnu salatu.

Pasta Salad



...Or how to avoid real cooking on 42*C! Choose any fresh, caned or frozen vegetables, that you have in fridge / pantry.

Ingredients:
500 g pasta, your choice
1,5 cups frozen beans
3 eggs
1 can (large) of your favorite tuna, drained
1 large carrot, grated
1 Spanish onion, cut into rings
1 cup black olives, pitted
salt, freshly grinded black pepper
olive oil
Method:
Cook pasta, eggs and beans in same pot until pasta al-dente. Drain, shell the eggs, chop them and with all other ingredients add them to pasta. Mix well, season to your liking and drizzle with some olive oil.

Salata sa tjesteninom
...za brzinski rucak, sa minimalno truda

Potrebno:
500 gr tjestenine, po vasem izboru
1,5 solja mahuna/boranije, smrznute (ili iz konzerve / svjeze)
3 jaja
1 konzerva (veca) tune, ocijedjena
1 velika mrkva, rendana na krupno
1 ljubicasti luk, sjecen na kolutove
1 solja crnih maslina, bez kospica
so, svjeze mljeveni crni biber
maslinovo ulje
Nacin:
Skuhajte tjesteninu, jaja i mahune u istoj vodi dok tjestenina ne bude gotova. Ocijedite. Ocistite jaja i izreziteih, ubacite u tjesteninu. Dodajte ostale sastojke i zacinite solju i biberom. Pospite maslinovim uljem.

Beans and Corn Salad with Capsicum and Onion


The heat of summer has arrived in my City, and that means I will spend as little time cooking/baking as possible. Meals will mostly consist of combined ingredients and BBQ. One of 'combined-ones' is this salad; it contains complete protein and good carbs, so it is all-in-one meal. Perfect for vegetarians. It takes 5 minutes to make it.

Ingredients:
2 cans of red kidney beans
1 can of corn
1 Capsicum, red, diced
1-2 Spanish onions, diced
2-3 tbs olive oil
1-2 tbs Balsamic Vinegar
salt and pepper to taste
Method:
Drain cans; combine all ingredients, mix well. Season according to your taste.

Grah/pasulj i kukuruz salata sa paprikom i lukom

Kada vrucine nastupe u mom gradu, uglavnom izbjegavam da kuham. cesto se obroci sastoje od 'kombiniranja' namirnica. Ova salata ima sve neophodne nutricionalne vrijednosti u jednom, a gotova je za svega 5 minuta.

Potrebno:
2 konzerve crvenog graha
1 konzerva kukuruza
1 crvena paprika, mesnata, iskockana
1-2 Spanska (ljubicasta ) luka, iskockana
2-3 kasike maslinovog ulja
1-2 kasike Balzamickog sirceta
so i biber prema ukusu
Nacin:
Ocijedite konzerve. Pomijesajte sve sastojke; dotjerajte ukus.

'Russian Salad' - A Classic of Balkans



I can't imagine New Year Eve without 'Russian Salad'. It's classic of Balkan countries, and I never heard any Russian mentioning something simmilar.
It goes well with any meat; it can last for whole week!


Ingredients:
4-5 medium potatoes, red, cooked in their skin, peeled
2-3 medium carrots, cooked
4 eggs, cooked
500 g peas, cooked
300-400 g cornichons / gherkins
250 g chicken (ham) salami, diced (optional!)
400-500 g mayonnaise (Tommy or SW, or make your own)
salt, pepper, lemon juice, sour cream, mustard to taste
Method:
Dice all vegetables, eggs and salami, mix well. Add mayonnaise and seasonings. Refrigerate, covered with plastic foil.
One pictured is without salami.



Ruska Salata

Potrebno:
4-5 srednjih crvenih krompira, kuhanih u ljusci
2-3 srednje mrkve, kuhane
4 jaja, kuhanih
500 gr graska, kuhanog
300-400 gr kiselih krastavcica
250 gr pilece salame ili sunkarice (nije neophodno!)
400-500 gr majoneze (tomy ili domace - recept)
so, biber, sok limuna, kajmak/pavlaka, senf po ukusu
Nacin:
Isjeckajte svo povrce, jaja i salamu na kockice. Dodajte majonez i ostale zacine, dobro promijesajte. Smjestite u frizider, pokriveno prozirnom folijom.
Verzija na fotografiji je bez salame.

Tabouli


 Famous Turkish salad

Ingredients:
1/2 -1 cup burghul (cracked wheat)
2 large tomatoes, diced
1 medium cucumber, peeled and diced
2-3 tbs chopped shallots
1/2 teas salt
1/2 teas pepper
1,5 cups parsley leaves (Italian), Chopped
1/3 cup chopped mint
Lemon zest (1/2)
2-3 tbs olive oil
3-4 tbs lemon juice

Method:
Soak burghul in cold water for 2 hours; drain and squeeze. Put it into a bowl, add everything else, and mix well.
Perfect with grilled meat.



Tabuli (Turska salata)

Potrebno:
1/2 -1 solja bungura (bulgur, lomljena psenica)
2 velika paradajza, sjeckana na koce
1 srednji krastavac, oguljen, sjeckan na kocke
2-3 kasike sitno sjeckanog mladog luka
1/2 kasicice soli
1/2 kasicice bibera
1,5 solja lisca persuna, sjeckanog
1/3 solje mente (nane), sjeckane
Ribana kora 1/2 limuna
2-3 kasike maslinovog ulja
3-4 kasike soka limuna

Nacin:
Namocite lomljenu psenicu u hladnu vodu, nakon 2 sata ocijedite i istisnite visak vode. Prebacite u posudu za serviranje, dodajte sve ostale sastojke, pa zacinite uljem i sokom limuna.
Odlicno uz meso sa rostilja.

Beetroot, goat cheese, pumpkin and rocket salad


This recipe was found in a Weight Watchers magazine, and soon became one of my favourites. Serves 4 or 6, points value 3 or 2.

Ingredients:
- Salad
1 bunch beetroot (3-4), trimmed, but not peeled
1/2 smaller pumpkin, cut into 3 cm cubes/wedges
1 clove garlic
1 tbs fresh thyme leaves
200 g rocket salad
2 tbs pine nuts (optional)
cooking oil spray
Salt and pepper
-Dressing:
60 g goats (or sheep)cheese
1/2 garlic clove, chopped/pressed
1 tbs lemon juice
1-2 tbs water
2 tbs olive oil
cracked black pepper
Method:
Preheat oven to 180*C. Wrap the beetroots in foil, place them in oven and bake for 30-45 minutes. Spray pumpkin with oil, toss garlic and thyme on top and bake for 20-30 min. Let it cool a bit, then remove the skin from beetroot (use gloves!). Cut into wedges. Rinse rocket, place into serving dish, add pumpkin and beets.
Prepare dressing:
Place all the ingredients into small processor - process until smooth.
Drizzle over the salad, sprinkle with pine nuts and pepper.


Salata od cvekle, tikve i ovcijeg sira

Potrebno:
3 - 4 cvekle (ovisno o velicini)
1/2 manje tikve (one fine narandzaste u sredini)
150 gr rokule
po ukusu so, origano
1 ceno bijelog luka
malo maslinovog ulja
Preljev:
60 gr mekanog kozijeg/ovcijeg sira (feta)
2 kasike maslinovog ulja, djevicansko
1 kasika limunovog soka
1 malo ceno bijelog luka, protisnutog
2 kasike vode
malo crnog bibera, svjeze mljevenog
Priprema :
Operite cvekle, odrezite im donje i gornje krajeve i umotajte u AL-foliju. Ubacite u pecnicu na oko 30-45 min (200*C), u ovisnosti o velicini.
Ogulite tikvu, isijecite je na podjednake komade, posolite i prelijte uljem u koje ste protisnuli ceno bijelog luka. Dodajte malo listica origana, te i to ispecite u tepsiji (20-ak minuta).
Dok se povce hladi pripremite rokulu – operite i ocijedite, rasporedite po vecoj plitkoj posudi.
Preljev cete napraviti tako da sve sastojke pomijesate i izmiksate sa ‘Stab” mikserom.
Nakon sto se cvekla prohladila, ogulite je (rukavice!) i isijecite na manje reznjeve. Rasporedite je preko rokule naizmjenicno sa komadima tikve.
Pospite preljev i uzivajte.
