Fruit, Nut and Avocado salad


It is HOT today...40*C...which means salad for lunch!

Salads are often complete meals during summer in my household. We go creative with fridge ingredients; everyone adds what they like. Boys usually want something meaty (salami, ham, tuna...) while I prefer some fruit and nuts in it. Nice fresh dressing over it, and I don't need anything better.
What sort of salads do you like?

Ingredients: (for 1 person)
1-2 handfuls of salad greens (mixture)
1/4 avocado, sliced
3-5 strawberries, sliced
2-4 tbs walnuts, chopped

Orange  Dressing (for 2-4 servings)
1 orange, juice + a bit of zest
4-5 tbs olive oil
pinch of pink salt
1 tsp mustard
1 tbs parsley leaves, chopped (optional)

Mix all ingredients, pour with orange dressing over it. Enjoy!


Salata sa avokadom, vocem i orasima

Danas je VRUCE...40*C...sto znaci salata za rucak!
Salate su ceste za obrok tokom ljeta u mom domacinstvu. Postajemo kreativni sa sadrzajem frizidera; svako ubacuje u svoj obrok ono sta voli.Decki obicno zele nesto 'mesno' (slama, sunka, tuna...) dok ja volim voce i orasaste plodove u salati. Fin preljev preko, i meni ne treba nista bolje.
Kakve salate vi volite?

Potrebno: (za 1 osobu)
1-2 sake mijesaneih listova salate
1/4 avokada, izrezan
3-5 jagoda, izrezane
2-4 K oraha, sjeckanih

Preljev sa sokom narandze (za 2-4 salate)
1 narandza, sok + jos malo ribane korice
4-5 K maslinovog ulja
prstohvat (pink) soli 
1 k senfa
1 K lisca persuna, sjeckan (opciono)

Pomijesajte sve sastojke, pospite sa preljevom. Uzivajte!

Spanish Orange Cake


My bags are packed! Only 24  hours left 'till long awaited holiday. First stop Bangkok, then Vienna and after that Bosnia. I won't be able to comment for 3 weeks; please excuse me!

This cake is made from whole oranges. I made something similar before ( Greek Orange Cake), so I expected it to be good.  No butter and no flour, but it's surprisingly moist and aromatic. The secret is in cooked oranges!

Ingredients:
2 oranges (organic, 280-300 g)
4 eggs
1 cup sugar
300 g almond meal
1 tsp baking powder

Method:
Wash oranges and place them in a pan; cover with water and cook for 1 hour 30 minutes. Take out, cut discard pips and process it into paste.
Preheat oven to 170*C,prepare 22 cm cake tin.
In another bowl, beat eggs and sugar until thick and fluffy. Add orange paste, almond meal and baking powder.  Fold in, transfer to cake tin and bake for 45-50 minutes.
After cooling, sprinkle with icing sugar and decorate with orange skin curls.
(Mine has cream cheese icing on top)


Španski kolač sa cijelim narandžama

Putne torbe spakovane! Sutra pocinje dugo ocekivani odmor. Prvo zaustavljanje Bangkok, zatim Bec i napokon Bosna. Tri sedmice necu biti u mogucnosti komentirati na vase postove; opravdajte me :-)

Ovaj kolac je pravljen od cijelih narandzi. Pravila sam nesto slicno prije (Grčki kolač sa narandžama), pa sam ocekivala da bude dobar. Bez brasna je i bez maslaca, ali je iznenadjujuce vlazan. Tajna je u kuhanim, pasiranim narandzama.

Potrebno:
2 narandze (neprskane, 280-300 gr)
4 eggs
1 solja secera
300 gr badema, samljevenih
1 k praska za pecivo

Nacin:
Stavite narandze u lonac, pokrijte vodom i kuhajte oko 1 sati 30 minuta. Izvadite, prohladite, isijecite i izvadite kospice. Ispasirajte narandze u sjeckalici.
Ukljucite rernu na 170*C, pripremite 22 cm obruc za kolace.
Umutite jaja sa secerom u gustu pjenu. Dodajte ispasirane narandze, mljevene bademe i prasak za pecivo. Uspite u obruc i pecite oko 45-50 minuta. Malo prohladite, zatim pospite secerom u prahu i ukrasite koricom narandze.

Zanzibari Orange and Clove Polenta Cake


 After watching a new cooking  program  on SBS (The spice trip), I had to try this Zanzibari cake with oranges and cloves.  
To me personally, cloves were overpowering.  Luckily, there is  someone in my family that like strong flavours and aromas, so whole cake was eaten  over the weekend. 
Next time, I will half the amount of cloves.

Ingredients: (adapted from original recipe)

Cake-
2 organic oranges, diced (whole)
125 g butter, softened
150 g sugar
3 large eggs
2 tsp ground cloves
2 tsp baking powder
1 1/2 tbs flour
140 g polenta
120 g ground almonds
2 peeled and sliced oranges , extra 
(to lay on the bottom of cake tin)
Syrup-
130 g sugar
1 orange , juice only
1 tsp cloves  
Method:
Switch oven to 180*C, prepare a cake tin, line with baking paper. Place slices of 2 oranges on bottom. 
Cook diced oranges in a little water. Take out and cool, then process or chop finely.
Meanwhile, cream butter and sugar; add eggs one by one. Mix in oranges (puree) and  all other ingredients. Pour cake batter over the sliced oranges. Place in oven and bake for 1 hour. 
Cook 130 g sugar with juice of 1 orange, until syrupy, add cloves. When cake is baked, turn over on a serving dish and pour syrup over it. Cool, then slice and enjoy!





Zanzibarski Palenta Kolač od Narandži i Karanfilića


Na jednom od Australijskih televizijskih programa (SBS), pocela je nova emisija o zacinima i kuhanju koja se zove 'Put zacina'. Nakon gledanja emisije o Zanzibaru i karanfilicima koji se tamo uzgajaju, morala sam isprobati ovaj kolac. Meni licno je bio previse aromatican, ali na srecu u mojoj kuci postoji neko ko voli jake arome,  tako da je cijeli kolac ipak bio pojeden za vikend. Sljedecu put cu sigurno umanjiti kolicinu karanfilica za pola!


Potrebno:

Kolac-
2 neprskane narandze, isjecene (cijele)
125 gr maslac, omeksalog
150 gr secera
3 veca jaja
2 k praha kakranfilica
2 k praska za pecivo
1 1/2 K brasna
140 gr palente
120 gr mljevenih badema
2 oguljene i izrezane narandze, dodatno 
(za postaviti na dno obruca)
Sirup-
130 gr secera
1 narandza, iscijedjen sok samo
1 k praha karanfilica
Nacin:
Ukljucite rernu na 180*c, pripremite obruc za kolace i prekrijte ga papirom za pecenje. Izrezite 2 oguljene narandze i postavite na dno obruca.
Skuhajte cijele (izrezane) narandze u malo vode; izvadite i prohladite. Isjeckajte u sjeckalici ili rucno (veoma fino).
Izmiksajte maslac sa secerom, dodajte jedno po jedno jaje, pire od narandzi i ostale sastojke. Uspite preko postavljenih narandzi i stavite peci oko 1 sat.
Skuhajte preostali secer sa sokom jedne narandze; treba da se malo zgusne. Kada je kolac pecen, okrenite ga na posluzavnik i prelijte ovim sirupom. Prohladite, onda rezite i uzivajte.

Jaffa Cupcakes



Bottom heater of my oven has died. Oven was purchased from Ikea; it turned out that spare parts are impossible to get in Australia ( UK based online store wouldn't post it to me). So, until we find a solution, we decided to buy a 'portable' oven (you know those small-ones).
These cupcakes are made to test my 'new' oven...It bakes OK, but very sloooowwww!

Ingredients:
3 eggs
3/4 cup sugar
100 g butter, melted
120 g dark chocolate, melted
1 organic orange (peel +  juice)
1 1/2 cups SR flour
80 g chocolate extra (+ 2 tsp oil) for glazing
Method:
Prehet oven to 180*C. Prepare cup cake tins.
Peel an orange with a thin potato peeler (reserve a few curls for decoration), squeeze it and keep the juice.  Chop the peel and place into a food processor with flour; process.
Beat sugar with eggs, until light and fluffy. Add orange juice, melted butter and chocolate. Beat on low speed until incorporated. Spoon flour / orange peel mixture on top and fold in. Spoon into moulds and bake for 15-20 min. Take out and cool.
 Melt chocolate with 2 tsp oil; dip or spread each cupcake and decorate with reserved orange zest curls.




Čokoladni Jaffa 'Cupcakes'


Grijac u mojoj rerni je 'crkao'! Rerna je kupljena u Ikei, i ispostavilo se da je dijelove za nju nemoguce pronaci u Australiji ( Englezi sa prodavnicom dijelova ne zele da mi je posalju postom). Dok nesto ne smislimo, odlucili smo kupiti jednu 'mobilnu' malu rernu. Ovaj jaffa kolac je bio prvo testiranje. Rena je u redu ali jaaakoo spora  :-(


Potrebno:
3 jaja
3/4 solje secera
100 gr maslaca, otopljenog
120 gr tamne cokolade, otopljene
1 neprskana narandza (tanko oguljena kora i sok - sacuvajte par svijutaka kore za ukrasavanje)
1,5 solja samodizajuceg brasna
80 gr cokolade + 2 k ulja za glazuru
Nacin:
Ukljucite rernu na 180*C, pripremite kalupe.
Izrezire koru narandze na manje komade, stavite je u sjeckalicu zajedno sa brasnom pa sameljite. Iscijedite narandzu. Umutite jaja sa secerom dok ne postane pjenasto. Ubacite sok, maslac i cokoladu. Lagano promijesajte. Po povrsini pospite brasno  sa korom narandze i rucno sjedinite. 
Kasikom prebacite tijesto u kalupe, pecite oko 15-20 min. Kad je gotovo prohladite.
Otopite cokoladu sa uljem, pa svaki 'cupcake' umocite ili premazite sa glazurom. Dekorisite sa sacuvanom korom narandze.

Cranberry-Orange Nut Bread


This is a wonderfully aromatic sweet bread, that is very much loved in my household during winter time, usually for breakfast or with coffee / tea.

Ingredients:
2 cups flour
1 teas baking powder
1/4 teas baking soda
1 cup sugar
1 large egg
1/2 teas salt
2/3 cup buttermilk
6 tbs butter, melted
1/3 cup fresh orange juice
1 tbs orange zest
1 cup cranberries, chopped
1/2 cup toasted nuts (walnuts), chopped
Method:
Preheat oven to 180*C, prepare a bread pan.
Combine all dry ingredients + nuts and fruit in a large bowl, mix with a spoon. In a smaller bowl, mix all wet ingredients. Pour it into the bowl with dry ingredients, mix until combined, but don't overdo it. Spoon into the bread pan. Bake 35-40 min, or until inserted toothpick comes out clean. Enjoy warm or cool.

Slatki Hljeb / Kruh sa Brusnicama, Narandzom i Orasima

Jedan od onih divnih, jednostavnih recepata koji odusevljavaju. Volimo ga imati za dorucak ili uz kafu / caj.

Potrebno:
2 solje brasna
1 k praska za pecivo
1/4 k sode bb
1 solja secera
1 vece jaje
1/2 k soli
2/3 solje tecnog jogurta /kiselog mlijeka
6 K maslaca, otopljenog
1/3 solje svjeze iscijedjenog soka narandze
1 K narandzine korice
1 solja brusnica, sjeckanih
1/2 solje pecenih oraha, sjeckanih
Nacin:
Ukljucite rernu na 180*C, pripremite kalup za hljeb.
U vecu posudu uspite sve suhe sastojke + voce i orahe; promijesajte.
U manju posudu umijesajte sve vlazne sastojke; malo mutite dok se ne sjedine mase.
Uspite u suhe sastojke i mijesajte dok se sve ne sjedini; nemojte previse mijesati, postace zilavo.
Uspite u pripremljeni pleh i pecite 35-40 minuta ili dok test-cackalica ne izadje suha iz tijesta. Odlicno toplo ili hladno.

Greek Almond, Orange and Semolina cake with Honey Syrup


Rustic looking, but very aromatic and tasty!

Ingredients:
Cake:

1 big or 2 small oranges(250 g)
125 g almonds, ground
175 g butter, very soft
175 g sugar, caster
3 eggs, large, beaten
250 g semolina
4,5 teas baking powder
Syrup:
225 ml homey + 5 tbs water
5 tbs orange juice
1,5 tbs lemon juice
4 cm cinnamon stick

Method:
Preheat the oven to 180*C. Prepare a 22 cm cake tin.
Cut the oranges into chunks, remove pips only, and tip it into a food processor. Whiz to a thick puree.
Put all other ingredients into a large bowl, mix until smooth. Fold in the orange puree, and spoon mixture into the tin, smoothing the top.
Bake for 35-40 minutes.
For last 10 min of baking prepare syrup: Boil water, cinnamon and honey (gently) for 5 minutes, then stir in the citrus juices.
Take the cake out when ready (place it on a deep plate), pierce it with a skewer in a few places, then pour the syrup over it.
For final serving you can use Greek yogurt and honey (optional).







Grcki griz kolac sa bademima , narandzom i medenim sirupom

Potrebno:
1 velika ili 2 male narandze (250 gr)
125 gr badema, mljevenih
175 gr putera, veoma omeksalog
175 gr secera
3 velika jajeta
250 gr griza
4,5 kasicice praska za pecivo
Sirup:
225 ml meda + 5 kasika vode
5 kasika soka narandze
1,5 kasika soka limuna
4 cm dug prutic cimeta
Priprema:
Zargij rernu na 180*C, pripremi 22 cm kalup za kolace.
Isjeci naranze na komade, povadi kospice, pa u elektricnoj sjeckalici samelji sve do konzistencije pirea.
U drugoj posudi pomijesaj sve satojke zajedno, pa dodaj i pire. Prebaci smjesu u kalup u zaravnaj povsinu.
Peci 35-40 minuta.
Za sirup: Zadnjih 10 minuta pecenja kolaca - prokuhaj vodu, med i cimet 5 minuta, pa dodaj sokove citrusa.
Izvadjeni kolac treba staviti u dublji tanjir, sa cackalicom izbosti povrsinu, pa preliti sirupom.
Za serviranje mozete upotrijebiti Grcki jogurt i med, ali nije neophodno.
