Salmon En Papillote ( Salmon Al Cartoccio)



Cooking fish 'en papillote' is perfect for an easy entertaining; prepare everything in advance, wrap it in paper and foil, line parcels onto baking dish. When guests arrive, just place it in oven. Ready in 20 minutes. Fish  prepared this way is never dried out.

Ingredients:
Salmon fillets (1  for each person), other fish can be used too
Lemon slices
Vegetables cut into sticks (zucchini, snow peas, carrots...)
Olive oil
Garlic (crushed)
Parsley leaves, chopped
Salt and pepper, to taste

Method:
Prepare paper and Al-foil squares for each piece of fish. Place some vegetable sticks on bottom (al-foil then paper over it), fish fillets over it. Season with salt and pepper, sprinkle with garlic, parsley a slice of lemon and drizzle with olive oil. Enclose paper and foil, pressing edges well. Repeat with others.  Bake for 20 minutes on 190*C. Serve with potatoes and salad.




Losos u paketicima

Zgodno za kada ocekujemo goste; pripremi se sve unaprijed, zamotamo u papir i foliju, poredamo po tepsiji. Kada prijatelji stignu, smjestite sve u rernu i pecite oko 20 minuta. Riba se na ovaj nacin nikada ne isusi.

Potrebno:
Fileti lososa (ili druge ribe), 1 za svaku osobu
Reznjevi limuna
Povrce rezano na prutice (tikvice, mahune, mrkva...)
Maslinovo ulje
Bijeli luk, sitno sjeckan ili protisnut
Lisce persuna, sjeckano
So i biber prema ukusu

Nacin:
Za svaki komad ribe pripremite komad papira i al-folije. Na dno stavite pruticepovrca, zatim ribu. Zacinite prema ukusu. pospite sa liscem persuna i bijelim lukom. Preko toga stavite rezanj limuna, zatim pospite maslinovim uljem. Stavite peci oko 20 minuta na temp 190*C. Najbolje servirati sa krompirom i salatom.

Simple Celebration Dinner



I had big plan for my 4-th anniversary (21st May) and 500 000 visits to my blog, which collided almost same day. Unfortunately, mother nature had her last word - flood in Bosnia happened and I didn't have any desire to celebrate. I was in my birth town with my thoughts and hart, feeling for my friends and family who had to suffer again.
Instead of that, here is suggestion for simple seafood dinner, which happened on 1/5 (Labor day in Europe; still very much celebrated).

-Cooked Prawns, bought
-Panfried Salmon with Chimichurri Dressingū
-Salad (mjesavina zelenih listova)

Jednostavna  vecera za proslavu

Imala sam velike planove za moj 4-ti 'blogorodjendan' (21/5) i 500 000 posjetitelja, koji su se gotovo na isti dan susreli. Na zalost, majka priroda je imala zadnju rijec - poplave su se desile i ja naprosto nisam imala volje za bilo kakav znacajniji post. Mislima i srcem sam bila u mom rodnom kraju, osjecajuci za prijatelje i rodbinu koji su ponovno patili.
Umjesto toga, evo prijedloga za jednostavnu veceru sa morskim plodovima (koja se desila 1/5)

Dukkah Crusted Salmon


Did you ever try Dukkah? I love it!  It's  an ancient seed and nut mixture of old Egipt. I always have it in my cupboard; it's good as nutritious snack or with drinks before dinner (crusty bread dipped in oil then dukkah) and /or as coating for fish and meats. It gives a special taste and aroma to otherwise plain dish.

Ingredients:
Salmon fillets, or other fish (1 for each person)
Dukkah
oil for frying
Method:
Place some dukkah onto a plate, press salmon fillets onto it, turning to coat every side. Heat oil in a pan and fry on medium heat for 5-8 minutes, turning once. Drain on paper towel. Serve with potato salad


 Losos uvaljan u Dukkah

Jeste li ikada probali Dukkah? Ja ga obozavam! To je mjesavina zacina, sjemenki i orasastih plodova starog Egipta. Uvijek ga volim imati u teglici,  jer je dobar i hranjiv za brzi 'snek' ili uz pice prije vecere (hljeb umocen u ulje, zatim u dukkah) ili kao spremna mjesavina za pohovanje ribe i mesa. Daje poseban ukus i aromu jelima koje bi bez njega bilo sasvim obicno.

Potrebno
Fileti lososa (ili druge ribe), jedan po osobi
Dukkah
Ulje za przenje
Nacin:
Uvaljajte komade ribe u mjesavinu pritiskajuci blago svaku stranu.Zagrijte ulje u tavi i przite na srednje jakoj vatri oko 5-8 minuta, okrecuci  komade ribe jednom. Ocijedite na upijajucem papiru.
Servirajte sa krompir salatom

Fennel Soup



I adore this soup; Easy to make!

Ingredients
2-3 fennel bulbs, sliced, a few spears reserved for decoration 
1 tbs butter 
1 tbs olive oil 
Water salt and pepper (white) 
80 - 100 g smoked salmon, small pieces 
Method
Heat oil and butter, add sliced fennel. Sautee for couple of minutes then cover with water (3-4
cups). Bring to boil and cook for 20-30 min. Use hand-held (stab) mixer to puree content. 
Season to taste, mix well, the add salmon pieces and decorate with fennel springs.



Supa / Juha od Komorača

Obozavam ovu supu; jednostavna za pripremu! 

 Potrebno: 
2-3 komoraca, izrezanog, nekoliko izdanaka ostavljeno za dekoraciju 
1 K maslaca 
1 K maslinovog ulja 
voda 
so i biber (bijeli) 
80 -100 gr dimljenog lososa, komadici 
Nacin
Zagrijte maslac i ulje, dodajte izrezani komorac i malo dinstajte. Zalijte vodom (oko 3-4 solje), dovedite do vrenja i kuhajte 20-30 min. Upotrijebite stapni mixer za pasiranje supe. Zacinite prema ukusu, promijesajte , zatim ubacite komadice lososa i dekorirajte sa izdancima komoraca.

Salmon Pinwheels



Great idea for lunch boxes...only 6 ingredients!

Ingredients:
2 cups SR flour
1/2 tsp salt
30 g butter, cold in small pieces
3/4 cup milk
1 can pink salmon, drained, bones and skin discarded
1 onion, chopped finely
50 g butter - extra, softened
Method:
Place flour, salt and cold pieces of butter into food procesoor. Pulse until butter incorporated, pour milk while processing. Switch off when it starts sticking together into dough. Dust working surface with flour; roll out the dough into a rectangle (like for swiss roll). Spread softened butter, then place mashed salmon and onion onto it. Leave one longer side without butter /salmon (2cm): brush it with water, then make a roll. Cut into 2-2,5 cm length, place into greased muffin moulds (that way scrolls will keep their shape better). Bake 15-20 min on 180*C.
Makes 12-15 pieces.



Losos zavijutci

Odlicno za 'mobilni' rucak...i samo 6 sastojaka!

Potrebno:
2 solje samodizajuceg brasna
(ili obicno brasno + 3-4 k praska za pecivo, dobro izmijesano i prosijano)
1/2 k soli
30 gr maslaca iz frizidera, sjeckanog
3/4 solje mlijeka
1 konzerva ruzicastog lososa(ocijedjenog, bez kostiju i koze, ispasiranog blago)

1 crveni luk, sjeckan sitno
50 gr maslaca, dodatno, omeksalog
Nacin:
Stavite brasno, so i maslac iz frizidera u elektricnu sjeckalicu. Mijesajte dok se maslac ne pomijesa sa brasnom. Ulijte mlijeko dok sjeckalica radi, i cim se pocne pretvarati u tijesto iskljucite. Pospite brasno po radnoj povrsini, razvaljajte tijesto na pravougaonik. Premazite sa maslacem, zatim lososom i lukom, ostavljajuci 2 cm pri kraju slobodno. Ovaj dio namazite vodom, zatim zarolajte tijesto (kao rolat). Rezite na 2-2,5 cm duzinu i stavite u namastene mafin kalupe (nije neophodno, ali tako ce bolje zadrzati oblik). Pecite 15-20 minuta na 180*C. Dobicete 12-15 komada.

Zucchini Rolls with Cream Cheese and Smoked Salmon


I want to let know all my blogger friends, that I'm unable to comment on many blogs!

This is an easy and decorative way of preparing zucchinis; Perfect finger food for parties.

Ingredients:
4-5 zucchinis, slice lengthwise (2 mm)
salt, olive oil, pepper (optional)
125 g cream cheese , smoked salmon flavor
125 g plain cream cheese
50-80 g smoked salmon, sliced into small pieces
chives to sprinkle
Method:
Salt zucchinis and brush with olive oil; set aside to wilt. (I grilled one side to speed up the process, but this is not necessary.)
Mix cheeses with salmon pieces. Spread each zucchini with this mixture and rool up. Place on serving plate and sprinkle with chives.


Rolne od Tikvica, sa krem sirom i lososom

Zelim da obavijestim moje blogger prijatelje, da sam u nemogucnosti da komentarisem na mnogim od njihovih blogova!

Dekorativan i lak nacin pripremanja tikvica; perfektni zalogajcici za zabave.

Potrebno:
4-5 tikvice, izrezane po duzini na 2 mm debljinu
so, maslinovo ulje, biber (po zelji)
125 gr krem sira sa ukusom dimljenog lososa
125 gr ovicnog krem sira
59-80 gr dimljenog lososa, rezanog na sitne komadice
vlasac za dekoraciju
Nacin:
posolite svaku tikvicu, premazite uljem i ostavite da omeksa. (Ja sam jednu stranu 'grilovala' da ubrzam proces, ali ovo nije neophodno)
Pomijesajte sireve i komadice lososa.
Premazite svaki komad tikvice sa ovom mjesavinom i zarolajte. Postavite na tanjir za sluzenje i pospite vlascem.

Rosti with pan fried Salmon


...Swiss Potato Pancake!

Ingredients:
4-6 medium potatoes, peeled
1 onion, finely grated
plain flour, to need
salt and pepper , to taste
oil for frying
4 Salmon fillets
Method:
Grate potatoes; add onion, salt and pepper. Leave it 10-15 min. Add enough flour to make soft and sticky 'dough'.
Heat a little oil in a pan. Dust palms with flour, take 3-4 tbs of potato dough and shape it with palms. Fry 2-3 pancakes at a time (do not over crowd, or rosti will not be crispy). Drain on paper towel.
Pan fry (seasoned) salmon; skin down first. Arrange with rosti onto plate and enjoy!



Švicarske palačinke od krompira (Rosti) sa prženim lososom

Potrebno
:
4-6 srednjih krompira, oguljeni
1 crveni luk, rendan na sitno
brasno, po potrebi
so i biber, prema ukusu
ulje za przenje
4 losos fileta
Nacin:
Izrendajte krompir, dodajte luk, so i biber. Ostavite 10-15 minuta, pa ubacite dovoljno brasna da napravite mekano, ljepljivo tijesto. Pobrasnite dlanove; stavite 3-4 K krompirovog tijesta na njih pa oblikujte 'pljeskavice'.
Zagrijte ulje u tavi i przite 2-3 pljeskavice (ostavite dosta prostora izmedju njih tokom przenja, ili nece biti hrskave). Ocijedite na upijajucem papiru.
Isprzite i (zasoljen) losos - strana sa kozom ide dolje prvo. Aranzirajte na tanjiru sa rosti-em i uzivajte dok je toplo.

Salmon with Mediterranean Dressing and Crispy Potato Wedges


Olive oil, lemon juice and chopped parsley are used as 'dressing' for fish mostly in Dalmatia (Croatia), Italy and Greece, but also in other Mediterranean countries, along with some more spices.

Ingredients:
4 salmon fillets (1 per person), or fish of your choice
4 large potatoes
salt and freshly ground pepper
oil for frying
rocket or other salad leaves for serving
Mediterranean dressing-
small bunch of parsley leaves, chopped
2 garlic cloves, crushed
juice and zest of 1/2 lemon
1/2 cup olive oil, extra virgine
Method:
Peel, cut into wedges and boil potatoes for 10-12 minutes; take out of water and cool it slightly.
Heat some olive oil into a pan,season fillets and cook each side for few minutes (skin side first). Add more oil into pan, heat and fry seasoned potato wedges until golden and crispy.
Place fish and potatoes onto plate, add salad of your choice. Mix all ingredients for dressing, spoon over fish and salad. Enjoy!


Losos sa Mediteranskim Prelivom i Hrskavi Krompirici

Maslinovo ulje, limunov sok i persunovo lisce se kao preliv za ribu uglavnom koristi u Dalmaciji, Italiji i Grckoj, mada i druge Mediteranske zemlje slicno koriste uz dodatak vise zacina.

Potrebno:
4 fileta lososa (1 po osobi) ili riba vaseg izbora
4 veca krompira
so i biber
ulje za przenje
rokula ili slicna salata
Mediteranski preliv-
mali svezanj persinova lisca, sjeckan
2 cena bijelog luka, protisnutog
sok i korica 1/2 limuna
1/2 solje djevicanskog maslinovog ulja
Nacin:
Ogulite, izrezite krompir i kuhajte ga 10-12 minuta u zasoljenoj vodi. Izvadite i ostavite prohladiti.
Zagrijte malo ulja u tavi, zacinite ribu i przite dok ne porumeni (strana sa kozom prvo). Dodajte jos ulja pa przite i krompir, dok ne porumeni.
Stavite ribu i krompir na tanjir zajedno sa salatom. Pomijesajte sve sastojke za preliv, pa kasikom prelijte ribu i salatu. Uzivajte!

Grilled Salmon with Basil Pesto




Ingredients:
4 salmon fillets (or other fish), skin on
salt, pepper, olive oil
4-5 tbs Basil Pesto, to serve
Salad / vegetable to serve
Method:
Salt and Pepper salmon, brush with olive oil. Pan fry, grill or BBQ - skin side first, until done - 3-5 minutes each side, depending on thickness (mine was BBQ-ed).
Arrange on plate, next to chosen salad.
Add 1 tbs of water to pesto, mix well. Pour over fillets and a bit over your salad.
Enjoy!


Losos sa roštilja, sa Pestom od Bosiljka

Potrebno:
4 fileta lososa (ili druge ribe)
so, biber i maslinovo ulje
4-5 kasika Pesta od Bosiljka, za servirati
Salata / povrce za servirati
Metod:
Posolite i pobiberite losose, premazite ih uljem. Pecite na tavi, grilu ili rostilju - strana sa kožom prvo; obicno treba 3-5 minuta za svaku stranu, u ovisnosti o debljini fileta.
Postavite na tanjir, zajedno sa salatom / povrcem.
U pesto dodajte 1 kasiku vode, pomijesajte. Prelijte preko lososa i malo preko povrca. Uzivajte!
