Crispy Parmesan Zucchini


First day of Spring in southern hemisphere! Enjoy this quick-and-easy recipe with it!

Ingredients:
Zucchinis
1-2 egg white, beaten lightly
Parmesan, grated
Bread crumbs 
Salt and pepper 
Olive oil

Method:
Cut zucchinis lengthwise into 4. Mix well with egg whites, to coat. Mix equal parts of parmesan and bread crumbs into a bag. Place zucchinis inside and shake it.  Place them onto baking try; season to taste (careful with salt), spray with olive oil and bake for 12-15 minutes at 180-190*C.


Hrskave Tikvice sa Parmezanom

Prvi je dan proljeca na juznoj polu-lopti! Uzivajte u njemu i ovom brzom i laganom receptu ( i vi gore na sjevernom dijelu) !

Potrebno:
Tikvice
1-2 bjelanca, lagano umucena
Parmesan, sitno rendani
Krusne mrvice / prezla
So i biber
Maslinovo ulje

Nacin:
Izrezite tikvice po duzini na 4 dijela. Izmijesajte ih dobro u umucenim bjelancima. Pomijesajte mrvice i parmezan u jednoj vrecici i ubacite tikvice. Protresite dobro, zatim prebacite tikvice na tepsiju. Zacinite po ukusu (pazljivo sa solju), nauljite po povrsini i pecite 12-15 minuta  na 180-190*C.

Korean Zucchini Pancakes



Feeling sick of meat, sweets and rich food? I do! Here is recommendation for some  light, vegetarian food;  perfect as canape bases too!

Ingredients:
Pancakes-
2-3 zucchinis, grated or cut into matchsticks
1 egg, beaten,  
1 green onion, sliced finely (or 1/4 medium onion)
3/4-1 cup flour
1/2 cup water
salt and pepper
a bit of oil for frying (or nonstick pan)
Dip-
2 tbs soy sauce
1 tbs water
2 tsp red vinegar
1 tsp sugar
black pepper
sesame oil (a few drops) and seeds (optional)

Method:
Mix all ingredients for pancakes. Heat a pan (and oil, if using). Spoon mixture into pancakes, as big or small as you want. Cook for 1-2 minutes, then turn and cook other side. Place onto serving plate.
For dip, Mix all ingredients and place into a shallow dish. Serve warm. Optionally, top with some prawns, salmon or other toppings.

 
Korejski 'penkejks' sa tikvicama

Je li vam muka od mesa, kolaca i konstantnog prejedanja teske hrane? Meni jeste! Evo prijedloga za lagani, vegetarijanski obrok; perfektno i kao osnove za kanapes.

Potrebno:
'Penkejks'-
2-3 tikvice, rendane ili sitno sjeskane na prutice
1 jaje, umuceno
1 mladi luk, sitno sjeckan (ili 1/4 srednjeg crvenog luka)
3/4 - 1 solja brasna
1/2 solje vode
so i biber
ulje za przenje (ili neprijanjajuca tava)
Umak-
2 K soja sosa
1 K vode
2 k crvnog sirceta
1 k secera
crni biber
ulje sezama (par kapi) i sjeme (opciono)

Nacin:
Umijesajte sve sastojke za penkejks. Zagrijte tavu ( i ulje ) i kasikom vadite smjesu u tavu (onoliko velike koliko zelite). Pecite 1-2 minute, zatim okrenite i pecite i drugu stranu. Stavite ih na tanjir za serviranje.
Za umak, pomijesajte sve sastojke i smjestite u plitku posudu. Servirajte tople, ili koristite ih kao podloge za kanape; sa kozicama, lososom ili necim drugim.

Fetta, Tomato and Zucchini Tart


Suggestion for a quick lunch...

 Ingredients:
 Pastry-
1 1/4  cup flour
120 g butter, from fridge
1/2 an egg, beaten
2-3 tsp cold water
pinch of salt
Topping-
1 large zucchini, sliced thinly (lengthwise)
1 large tomato, sliced thinly
100-120 g Fetta, sliced or crumbled
thyme (or other herbs)
2-4 tsp olive oil
salt and pepper to taste
Method:
Process ingredients for pastry in a food processor, take out, knead, and wrap into glad wrap. Leave in a cool spot for 10-20 minutes. Meanwhile, prepare toppings. Switch your oven to 190*C. Prepare tart tin (oblong or round).
Roll out the pastry  to your tin shape (between paper or glad wrap is the easiest way). Place it over the tin (mine was 36 x 13 cm), mould it with your hands and cut off excess. Place sliced zucchini on the pastry, then tomatoes. Spoon half of olive oil, season lightly. Place fetta over the veggies, sprinkle chosen herbs and spoon the rest of oil. Bake 20+ minutes. Enjoy while warm.




Tart sa Fetom, Paradajzom i Tikvicama

...za jedan brzinski rucak!

Potrebno:
Tijesto-
1 1/4 solja brasna
120 gr maslaca, iz frizidera
1/2 umucenog jajeta
2-3 male k hladne vode
malo soli
Povrsina-
1 veca tikvica, rezana po duzini i tanko
1 veci paradajz, rezan tanko
100-120 gr Feta sira, rezan ili izmrvljen
timijan / majcina dusica (ili drugo zacinsko bilje)
2-4 male  k maslinovog ulja
so i biber po ukusu

Nacin:
Izmrvite brasno sa komadicima maslaca i umijesite tijesto sa ostalim sastojcima (ili ovo ucinite uz pomoc sjeckalice). Zamotajte u foliju i ostavite.
Izrezite povrce i sir. Pripremite kalup za tart  i ukljucite rernu na 190*C.
Razvaljajte tijesto prema obliku vaseg kalupa (moj je bio cetvrtast 36 x 13cm). Postavite tijesto u kalup i prstima oblikujte; odrezite visak tijesta. Postavite tikvice preko tijesta, zatim paradajz. Pospite polovinu ulja i zacinite lagano. Pospite fetom i izabranim zacinskim biljem, zatim pospite preostalo ulje preko. Pecite oko 20+ minuta; uzivajte dok je toplo!

Zucchini Rolls with Cream Cheese and Smoked Salmon

This is an easy and decorative way of preparing zucchinis; Perfect finger food for parties.

Ingredients:
4-5 zucchinis, slice lengthwise (2 mm)
salt, olive oil, pepper (optional)
125 g cream cheese , smoked salmon flavor
125 g plain cream cheese
50-80 g smoked salmon, sliced into small pieces
chives to sprinkle
Method:
Salt zucchinis and brush with olive oil; set aside to wilt. (I grilled one side to speed up the process, but this is not necessary.)
Mix cheeses with salmon pieces. Spread each zucchini with this mixture and rool up. Place on serving plate and sprinkle with chives.


Rolne od Tikvica, sa krem sirom i lososom

Zelim da obavijestim moje blogger prijatelje, da sam u nemogucnosti da komentarisem na mnogim od njihovih blogova!

Dekorativan i lak nacin pripremanja tikvica; perfektni zalogajcici za zabave.

Potrebno:
4-5 tikvice, izrezane po duzini na 2 mm debljinu
so, maslinovo ulje, biber (po zelji)
125 gr krem sira sa ukusom dimljenog lososa
125 gr ovicnog krem sira
59-80 gr dimljenog lososa, rezanog na sitne komadice
vlasac za dekoraciju
Nacin:
posolite svaku tikvicu, premazite uljem i ostavite da omeksa. (Ja sam jednu stranu 'grilovala' da ubrzam proces, ali ovo nije neophodno)
Pomijesajte sireve i komadice lososa.
Premazite svaki komad tikvice sa ovom mjesavinom i zarolajte. Postavite na tanjir za sluzenje i pospite vlascem.

French Drumcticks with Zucchinis and Potatoes



Ingredients:
4 medium potatoes
4 zucchinis
Freshly ground black pepper
salt
oil for frying
8 large drumsticks (or 2 per person)
French spice blend-
1/4 cup flour
1 T dried mustard
1 T garlic powder
2 t paprika
1 t black pepper
1 t salt
Method:
Boil or microwave potatoes until cooked.
Cut off joint and skin of each drumstick, leaving bone exposed and with meat on upper part 'free'. Mix all dried spices with flour, dust meaty parts, shake off excess. Fry each side of drumstick for a few minutes, or until golden brown. Oil shouldn't be too hot, or drumstick will not be properly cooked. Take drumsticks out and wrap bones with al-foil. Discard excess oil, leaving only a tbs or so. Fry zucchinis (seazoned with salt and pepper) for a minute or two. Place meat, zucchinis and peeled boiled potatoes on plate and enjoy.


Francuski Bataci sa Tikvicama i Krompirom

Potrebno:
4 srednja krompira
4 tikvice
svjeze mljeven crni biber
so
ulje za przenje
8 vecih bataka (ili 2 po osobi)
Francuska mjesavina zacina-
1/4 solje brasna
1 K senfa u prahu
1 K bijelog luka u prahu
2 k crvene paprike
1 k crnog bibera
1 k soli
Nacin:
Skuhajte krompire u vodi (ili mikrovalnoj).
Odrezite zglobove i kozu sa bataka, ostavljajuci gornji mesnati dio slobodan.
Pomijesajte brasno sa zacinima u prahu, uvaljajte batake. Przite na srednje jakoj vatri sa svih strana dok ne postane zlatno braon.Izvadite batkove i vidljivi dio kostiju oblozite folijom. Istresite visak ulja iz tave (ostavite samo malo) i proprzite tikvice (zacinjene solju i biberom) par minuta. Postavite sve na tanjir, zajedno sa oguljenim skuhanim krompirom i uzivajte.

Zucchini and Carrot Fritters with Beetroot Tzatziki


Delightful bites at any time and occasion!

Fritters:

2-4 small zucchinis
1 large carrot
1 large onion
2-3 medium potatoes
2 eggs
1-1,5 cups SR flour
1/2 cup fine corn meal
1 teas salt, pepper
oil for frying
Beetroot Tzatziki:
1 large beetroot,peeled and grated
1-1,5 cups yogurt
2-3 gloves garlic, crushed
Method:
Grate all vegetable, put salt and let rest for 10-15 minutes. Squeeze the moisture,replace into other bowl; add eggs, flours and pepper. Mix well. Heat oil in a frying pan. Place a spoonful into hot oil (I used egg rings for shape), and fry a minute each side (or until golden). Drain on absorbent paper.
For Tzatziki:
Grate beetroot, mix with yogurt and garlic.
Serve hot!


'Prženice' od Tikvica i Mrkve sa Cvekla 'Cacikijem'

Prženice:
2-4 manje tikvice
1 veca mrkva
1 veci crveni luk
2-3 srednja krompira
2 jaja
1 -1,5 solja samodizajuceg brasna
1/2 solje kukuruznog sitnog brasna
1 kasicica soli, biber crni
ulje za przenje
Cvekla 'Caciki':
1 velika cvekla, rendana
1-1,5 solja gustog yogurta/kiselog mlijeka
2-3 cena bijelog luka, protisnutog/sitno rendanog
Nacin:
Izrendajte svo povrce, posolite i ostavite 10-15 minuta. Ocijedite visak tecnosti (pritisnite rukama), dodajte brasno, jaja i biber. Umijesite. Zagrijte ulje, vadite smjesu kasikom i przite 1 minutu sa svake strane, ili dok nebude zlatno-zute boje. Izvadite na apsorbirajuci papir.
'Caciki': Izrendajte cveklu, dodajte jogurt i bijeli luk, pa dobro promijesajte.
Sluzite dok je toplo!

Zucchini filled with lentils and fetta



Ingredients:
1 tbs black mustard seeds
1 tbs oil
1 onion, finely chopped
1 big tomato, finely chopped
1 big garlic clove, pressed
2/3 cup red lentils
1 cup vegetable stock
1 tbs fresh oregano, chopped
100 g fetta cheese
6-8 zucchini, halved lengthwise

Method:
Prepare zucchinis - hollow each small one lengthwise (boat shape), big ones cut in equal pieces (vertically) then hollow with a teaspoon.
Heat a frying non-stick pan and 'fry' black mustard seeds until start to pop and release smell. Set aside.
Heat oil in another deeper pan, fry onions, add garlic and tomato.Cook until soft. Pour stock, add lentils and cook for 20 minutes.
Remove from heat, add oregano,fetta and mustard cheese. Let it cool slightly.
Fill zucchinis with the filling, put in a baking dish, spray with olive oil and bake for 15min on 200*C.
Perfect for lunch, picnic, as finger food or side dish. Best served warm!




Tikvice filovane lecom i feta sirom

Potrebno:
1 kasika sjemena gorusice/senfa (crni po mogucnosti)
1 kasika ulja
1 veliki crveni luk, sjeckan
1 veliki paradajz, sjeckan bez sjemena
1 veliko ceno bijelog luka, protisnutog
2/3 solje (solja=250ml) crvene lece
1 solja supe od povrca ( ili Vegeta rastopljena u vreloj vodi)
1 kasika svjezeg origana, sjeckanog
100 gr feta sira
6-8 tikvica, zavisno o velicini, prepolovljene po duzini, izdubljene poput camaca

Priprema:
Pripremite tikvice - manje izdubite poput camaca, vece prerezite poprijeko na iste velicine, pa izdubite sredu kasicicom.
Proprzite sjeme senfa na suho,dok ne pocne pucketati i pustati miris, pa ostavite po strani.
U drugu posudu zagrijte ulje, isprzite luk, bijeli luk, pa dodajte paradajz. Uspite supu/vodu i lecu pa kuhajte oko 20 minuta. Prohladite.
Skinite sa vatre pa dodajte sir, sjeme senfa i origano.
Filujte pripremljene tikvice. Stavite ih u pripremljenu posudu u kojoj cete peci,pospricajte maslinovim uljem i pecite oko 15 min na 200*C.
Idealno za rucak, izlete, 'male zalogaje' ili prilog. Najbolje je sluziti toplo!
