Bacon (or Ham) and Cheese Rolls



Bread rolls like these are sold around Australia, and are popular as quick alternative for breakfast and /or lunch. Homemade are, off course, much better and cheaper.

Ingredients:
Dough-
3 cups bakers flour
1/2 cup milk
2/3 cup water
1 tsp salt
1 tsp yeast (instant)
1 tsp sugar
3 tbs oil
Topping-
bacon, (or ham, turkey), diced 
grated cheese 

Method:
Place all ingredients for dough into a bowl or bread machine. Make a soft dough and let it double covered, in a warm spot.
Divide dough into pieces (around 65-75 g each) and shape balls. Place them onto baking sheet (with paper or greased) and press them slightly. Sprinkle with bacon pieces and grated cheese. Let it rest for 20+ minutes. Switch oven to 170*C. Cover with baking paper or al foil (with some space between) and bake for 20-25 minutes. They should stay very soft and cheese should not burn. Good warm or cold.



Pecivo sa Šunkom i Sirom  

Ovakva peciva se prodaju sirom Australije i omiljeni su sastojak za dorucak i/ili rucak za ponijeti. Domace su, naravno, puno bolje i jeftinije!

Potrebno:
Tijesto-
3 solje brasna za peciva
1/2 solje mlijeka
2/3 solje vode
1 k soli
1 k instant kvasca
1 k secera
3 K ulja
Za posuti-
mesnata slanina, rezana na kockice (ili puretina, sunka)
ribani sir

Nacin:
Umijesite tijesto; rucno, mikserom ili u pekacu. Ostavite da nadodje. Podijelite tijesto na komadice oko 65-75 g.  Oblikujte loptice, postavite na tepsiju (namastenu ili sa papirom) i blago pritisnite. Pospite sa sunkom i sirom. Ostavite oko 20+ minuta da se odmore. Ukljucite rernu na 170*C.
Pokrijte peciva sa papirom za pecenje (ili folijom), ali neka ne dodiruje povrsinu.Pecite oko 20-25 minuta. Treba da ostanu mekane i sir ne smije uhvatiti mnogo boje / izgoriti. Dobre tople ili hladne.

Cheese and Cherry Strudel




Delightful combo! Instead of making your dough, you can use ready filo pastry (2 X 4 layers, placed next to each other, slightly overlapping, brushed with melted butter/oil)

Ingredients:
Dough /Filo pastry-
1 1/2 cups plain flour
1 tbs oil
1 egg, beaten
pinch of salt
2/3 (+) cup water
Filling-
250 g cream cheese
250 gr ricotta cheese
1 large or 2 small  eggs
vanilla essence
1/2 cup icing sugar
1 jar (670 g) sour cherries, drained (or fresh-ones, pitted)
1-2 tbs fine semolina
Extra-
flour, 1/4 cup melted butter (or oil)
rolling pin, large tablecloth (if making your own dough)

Method:
How to prepare and stretch the dough
Mix all ingredients for filling, except cherries and semolina. Place along one side of dough. Shake cherries and semolina together (in a plastic bag). Put them onto cheese filling, brush  (sprinkle)  dough with melted butter and roll into a log. Brush top with extra butter, place onto baking tin
 and bake for 35 minutes at 180*C. Dust with icing sugar and serve.



Štrudla sa sirom i višnjama

Jedna od odusevljavajucih kombinacija! Umjesto razvlacenja jufke, mozete koristiti gotovu; 2 X 4 sloja, postavljena jedan do drugog, preklapajuci se. Premazite svaki sloj sa rastopljenim maslacem.

Potrebno:
Jufka- 
1 1/2 solja brasna
1 K ulja
1 jaje, umuceno
malo soli
2/3 solje(+) vode
Fil-
250 gr krem sira
250 gr rikote
1 vece ili 2 manja jajeta
vanila esencija
1/2 solje secera uprahu
1 tegla visanja, ocijedjene (ili svjeze bez kospica)
1-2 K griza / krupice
Jos-
brasno, 1/4 solje istopljenog maslaca
oklagija i veliki stolnjak (ako razvlacite jufku)

Nacin:
Kako pripremiti i razvuci tijesto
Pomijesajte sve sastojke za fil, osim visanja i griza. Nakon sto ste razvukli jufku (ili postavili gotovu), stavite na jednu ivicu fil. Protresite visnje i griz u jednoj kesi , pa i to nanesite preko sira. Poprskajte jufku sa rastopljenim maslacem i zarolajte. Premazite vrh sa jos maslaca, postavite na tepsiju i stavite peci oko 35 minuta na 180*C. Pospite sa secerom u prahu i servirajte.

Cheese and Parsley Pide




Fresh cheeses (ricotta, quark, cottage and farmers cheese...) are so versatile. You can use them for so many creations, from savoury to sweet dishes.
The other day I  found this recipe at a blog that I follow:

I made Pide before, but wanted to taste this-one with parsley and cheese. Delicious!

Ingredients: (for 2 large or 4 small)
2 cups flour
1 tbs oil
3/4 tsp yeast
1/2 tsp salt
pinch of sugar
1 3/4 cups water
-Filling
250 g ricotta
100 g tasty (or cheddar, grated)
1/2 tsp salt
2 eggs, beaten (leave a bit for brushing edges of dough)
1 small bunch parley leaves, chopped
white pepper to taste

Method:
Make dough as you would for pizza. Let it double, covered.
In another bowl, mix all ingredients for filling. Preheat oven to 180*C.
Divide dough into 2 or 4. Roll out each into an oval, spread with filling leaving 2-3cm edges empty. Return edges towards centre, pressing  overlaps. Brush edges with reserved egg. Place pide onto flat baking pans and bake for 15+ minutes.



Pide sa sirom i peršunovim lišćem

Svjezi sirevi  (rikota, svapski, quark, 'cottage'...) su tako zahvalni za kreaciju raznih delicija, bilo slanih ili slatkih.
 Neki dan sam, na jednom blogu koji pratim  (http://mutfagimdanpaylasimlar.blogspot.com.au/2014/07/peynirli-pide.html), vidjela recept za pide sa sirom. Pravila sam pide ranije, ali sam zeljela probati ovu sa dosta persunovog lisca, koje veoma volim. Odlicno i ekonomicno!

Potrebno: (za 2 vece ili 4 manje)
2 solje brasna
1K ulja
3/4 k instant kvasca
1/2 k soli
malo secera
1 3/4 solje vode
-Fil
250 gr rikote ili kvarka
100 gr tvrdog sira (kashkavalj, tasty...) rendanog
1/2 k soli  (+,-)
2 jaja, umucenih (ostavite malkice za premazivanje krajeva tijesta)
1 mali svezanj persunovog lisca, sjeckano
bijeli biber po ukusu

Nacin:
Umijesite tijesto kao sto biste za pizzu. Pokrijte i ostavite da naraste.
U drugoj posudi pomijesajte sve sastojke za fil. Ukljucite rernu na 180*C.
odijelite tijesto na 2 ili 4; razvaljajte svaki komad ovalno. Premazite sa filom, ostavljajuci krajeve ( 2-3) cm nepremazane. Vratite te krajeve prema sredini i pritisnite spojeve. Premazite sa prostalim dijelom jajeta, smjestite na tepsiju i pecite 15+ minuta.

Bacon and Cheese Breadsticks


These breadsticks are addictive! Be aware!

Ingredients:
80-100 g smoked bacon, finely diced
50 g butter (I reserved lard and added butter to make up 50 gr)
1/2 cup milk
1 tsp yeast
250 g flour
60 g parmesan, grana padano or chedar, grated
3/4 tsp salt (less if bacon very salty)

Method:
Microwave bacon for 1-2 minutes (cover with a paper towel), or cook in a pan, until golden brown. (I reserved lard and used it with butter, making up 50 g of fat). Place all ingredients in a bowl and mix until dough formed. Cover and rest for 30+ minutes in a warm spot.
Roll out to 1 cm thickness, then cut into sticks.
Bake for 8-12 minutes (180*C), or until golden. 



Grisini sa slaninom i sirom

Ovi grisini izazivaju ovisnost; upozoreni ste!

Potrebno:
80-100 gr, dimljene slanine, sitne kockice
50 gr maslaca(ja sam sacuvala mast i dodala maslaca)
1/2 solje mlijeka
1 k instant kvasca
250gr brasna
60 gr parmezana ili slicnog sira, rendanog
3/4 k soli (ili manje ako je slanina jako slana)

Nacin:
Proprzite komadice slanine ( ili stavite u mikrovalnu) dok ne pozute blago. (Ja sam sacuvala masnocu i dodala jos maslaca da nacinim kolicinu od 50 gr). Stavite sve sastojke u posudu i umijesite tijesto. Pokrijte i ostavite na toplom oko 30+ minuta. Razvaljajte na debljinu oko 1 cm, zatim narezite na trake. 
Pecite na 180*C 8-12 minuta, ili dok ne postanu zlatno zuti.

'Kifle' - Milk rolls filled with Ricotta (or Frankfurters, or Ham'n'Cheese)



I always have some of these in my freezer. Everyone loves them and they so easy to reheat (microwave) and enjoy for breakfast, lunch or snack. You can fill them with ricotta, frankfurters or ham and cheese.

Ingredients:
Dough-
6 cups bakers flour
1 cup water
1 cup milk
2 tsp salt
1 tsp sugar
2 tsp yeast
100 ml oil 
Brushing-
1 egg, beaten, some seeds..sesame, caraway, nigella, linseed, poppy... (optional)
Filling-
500 g Ricotta
1 egg
1 tsp salt,
OR
cocktail Frankfurters (or halves of regular-ones), 
OR
ham and (hard) cheese, cut into sticks...
Method:
Make a dough using your bread machine or by hand. Cover and leave it on a warm spot to double. Divide into 3 (large 'Kifle') or 4 (smaller), roll out into a 25-30 cm circle. Brush centre with a bit of water; this will prevent unwrapping during baking. Cut as you would cut pizza, into 8 wedges. Fill with your chosen ingredients- place them on outher edges of the dough; roll toward the pointy part, stretching a bit. Place onto paper lined baking dish. repeat with others. Make sure to leave some space between them. Cover with a clean tea towel. 
Switch oven to 180*C. When hot, brush rolls with a beaten egg and sprinkle with seeds. Bake for 12-15 minutes, or until golden and fluffy. 


Uvijek ih imam u zamrzivacu! Svi ih vole i tako je lako podgrijati ih u mikrovalnoj i uzivati u njima bilo za dorucak, rucak, uzinu...Mogu se puniti svim i svacim - mashti na volju!

Potrebno:
Tijesto-
6 solja brasna
1 solja vode
1 solja mlijeka
2 k soli
1 k secera
2 k instant kvasca (ili svjezeg)
1 dl ulja
Premazivanje
1 jaje, umuceno...sjemenke po vasem izboru (opciono)
Fil-
500 gr rikote (ili slicnog sira)
1 jaje
1 k soli
ILI
mini hrenovke / virsle (ili prepolovljene velike)
ILI
prutici sunke i nekog tvrdog sira...
Nacin:
Umijesite tijesto rucno ili uz pomoc pekaca. Pokrijet i ostavite na toplome mjestu da naraste. 
Podijelite na 3 (za vece kifle ) ili 4 dijela (za manje). Razvaljajte svaki dio na 25-30 cm krug. Navlazite sredinu kruga sa malo vode (da se ne odmotavaju tokom pecenja). Rezite kako biste rezali picu, tj na 8 trokutova. Na vanjski (tj siri ) dio stavite odabrano punjenje, zarolajte prema centru, blago rastezuci.
Postavite na papirom oblozenu tepsiju. Ponovite sa ostalima, pazeci da ostavite dovoljno mjesta izmedju. Pokrijte i ukljucite rernu - 180*C. Kada se zagrijala, premazite sa umucenim jajetom i pospite sjemenkama. Pecite oko 12-15 minuta, ili dok ne postanu zlacano zute i narasle.

Breakfast in my Garden (Bread Pudding)





 It's early morning... I was awoken by birds'  sounding and drawn outside to my garden...Spring has sprang and already  doing it's magic in all living beings. I quickly prepared breakfast and took it out to enjoy orange blossom smell  and birds' songs...It looks like an awesome beginning to a beautiful day!

Bread Pudding
Great way to use old bread and anything from your fridge that has to be used!

Ingredients:
6-7 slices grain (or other) bread, cubed
1 cup milk, warm
1 small onion, finely diced
1 tsp oil
1 garlic clove, crushed
1/2 red capsicum, diced
200 g button mushrooms, diced
100 g rocket salad, chopped
100 g ham, diced
4 eggs
2 egg whites
salt and pepper, to taste
120 g tasty cheese, grated
Method:
Combine bread and milk, let it stand for 10-15 minutes.
Preheat oven to 180*C; coat a square pan with cooking oil spray.
Heat oil in a pan, saute onion, garlic, mushrooms and capsicum for a couple of minutes.
Combine vegetables with salad leaves, half the cheese, ham and bread; spoon into the prepared pan. Beat egg whites and eggs, season and pour over the bread mixture. Sprinkle with other half of cheese. Bake for 25-35 minutes, or until cooked.





Rano je jutro...Probudili  su me zvukovi ptica i privukli da izadjem u bastu. Proljece je pristiglo i vec razbacuje svoje magicne cari na sva ziva stvorenja. Na brzinu sam pripremila dorucak i iznijela ga vani da uzivam u mirisu procvjetale narandze i pjesmama ptica...Izgleda kao divan pocetak jednog proljetnog dana!


'Popara' - Puding od  hljeba

Odlicno za iskoristiti stari hljeb i sve ono sto vam dugo stoji u frizideru

Potrebno:
6-7 kriski kruha / hljeba, rezanih na kockice
1 solja mlijeka, toplog
1 manji crveni luk, sjeckan
1 k ulja
1 ceno bijelog luka, protisnuto
1/2 crvene paprike, sjeckane na kocke
200 gr sampinjona (ili drugih gljiva), sjeckane
100 gr rukole, sjeckane
100 gr sunke (ili slicno), sjecakne na kockice
4 jaja
2 bjelanca
so i biber, prema ukusu
120 gr tvrdog sira, rendanog
Nacin:
Prelijte mlijeko preko komada hljeba; ostavite 10-15 minuta po strani.
Ukljucite rernu na 180*C, pripremite cetvrtastu posudu za pecenje.
Zagrijte ulje, proprzite luk, papriku i gljive par minuta.
Pomijesajte ovo sa hljebom, polovinom sira, salatom i sunkom. Umutite jaja, zacinite i prelijte preko svega. Pospite preostalim sirom i pecite 25-35 minuta.

Classical Baked Cheese Cake (Donna Hay recipe)



Donna Hay is Australian 'Martha Stewart'. All her recipes are proven and always give great results. So is this  baked cheese cake, one of my favourites. Have a good weekend!

Ingredients:
Base-
1/3 cup ground almonds (almond meal)
¾ cup plain flour
¼ cup caster sugar
90g chilled butter, chopped
Filling-
330g cream cheese, softened
500g fresh ricotta
4 eggs
1 1/3 cups caster sugar
1 tablespoon grated lemon rind
¼ cup lemon juice
½ teaspoon vanilla extract
1½ tablespoons cornflour
1½ tablespoons water

Method:
Preheat oven to 150°C.
Base- place the ground almonds, flour, sugar and butter into a bowl. Rub mixture with your fingertips until it forms coarse crumbs, or use food processor for this.
Line the base of a 20-22 cm spring form tin with non-stick baking paper. Place the base mixture in the tin and press gently with  a spoon, until surface is smooth. Bake for 15 minutes, set aside.
Filling -  place the cream cheese, ricotta, eggs, sugar, lemon rind, juice and vanilla in a food processor. Combine the cornflour and water until smooth and add to the cheese mixture. Process the mixture until smooth.
Pour the filling over the base. Tap lightly to remove any air bubbles. Bake for 1 hour. Turn the oven off and stand the cake in the oven for 1 hour, leaving the door closed. Take out and cool, then refrigerate until cold and serve.




Klasični pečeni kolač od sira (Donna Hay recept)

Donna Hay je Australijska Marta Stjuart. Svi njeni recepti su provjereni, testirani i uvijek daju odlicne rezultate. Takav je i ovaj peceni 'cheesecake', jedan od mojih licnih favorita. Dobar vikend zelim!

Potrebno:
Baza-
13/ solje mljevenih badema
3/4 solje brasna
1/4 solje sitnog secera
90 gr rashladjenog maslaca, isjeckanog
Fil-330 gr krem sira, omeksalog
500 gr rikote sira
4 jaja
1 1/3 solje secera
1 kasika ribane limunove korice
1/4 solje limunovog soka
1/2 male kasike vanile
1 1/2 kasika 'gustina' (ili slicnog skrobnog brasna)
1 1/2 kasika vode
Nacin:
Zagrijte rernu na 150*C.
Baza- smjestite sve suhe sastojke u posudu, utrljajte maslac (ili koristite elektricnu sjeckalicu).
Postavite papir za pecenje u obruc od 20-22cm. Smjestite baznu smjesu na dno, pritisnite kasikom. Pecite 15 minuta, ostavite na stranu.
Fil- stavite sireve, jaja, secer, limunov sok ikoricu i vanilu u 'sjeckalicu'. Pomijesajte skrobno brasno i vodu, pa i to ubacite. Izmiksajte dok ne postane glatko.
Prebacite ovu smjesu preko baze; lakano lupnite po radnoj povrsin i kako bi mjehurici zrake izasli. Pecite 1 sat, iskljucite rernu i ostavite 'cake' unutra jos 1 sat (zatvorena rerna - ovo ce omoguciti ravnomjerno zagrijavanje/hladjenje, tj kolac nece popucati po povrsini). Izvadite, dodatno prohladite, pa smjestite u frizider, dok ses sasvim ne ohladi. Sluzite i uzivajte!

Cheese and Sesame Biscuits


It's Friday!!! ... and for Friday something that goes well with (Fridays') drinks. Cheers!
These wonderful savoury biscuits are from an old Australian cook book "Women's Weekly". 

Ingredients:
1 cup flour
1/2 tsp salt
 pinch cayenne pepper (optional)
1/2 tsp dry mustard
1/2 tsp sugar
60 g grated cheese (tasty)
1/3 cup sesame seeds
1 egg yolk
1 tbs water
Method:
Mix all ingredients, form a log. Wrap in cellophane or baking paper; refrigerate. When firm, take out and slice into 2-3 mm discs. Place onto lined biscuit pan and bake for 10-12 minutes at 180*C.
Enjoy them with drinks!

Tip: If you want perfectly rounded biscuits,
 place dough log into a tissue / aluminium foil 
cardboard core before refrigerating it. 
Savjet: Ukoliko zelite perfekto okrugle keksice,
 smjestite valjak tijesta u kartonsku osnovu od
 al-folije ili papirnih maramica, prije rashladjivanja.




Slani keksi sa sirom i sezamom

Konacno petak!!!...a za petak nesto sto odlicno ide sa picem . U zdravlje!
Recept je iz Australijske  knjige  recepata 'Women's Weekly'.

Sastojci:
1 solja brasna
1/2 k soli
prstohvat 'cayene' bibera (po zelji)
1/2 k senfa (prah)
1/2 k secera
60 gr tvrdog rendanog sira
1/3 solje sezama
1 zumance
1 K vode 
Nacin
Pomijesajte sve sastojke i umijesite tijesto. Formirajte valjak, zamotajte ga u plasticnu foliju i stavite u frizider. Kada se stegne, izvadite i rezite na 2-3 mm kolutove . Smjestite ih na papirom prekriveni pleh i pecite 10-12 minuta na 180*C. Uzivajte u njima uz vase omiljeno pice.

Chicken Muffins


 
Great thing about this recipe is that you can shape this mixture into low fat (and calorie) muffins or burgers (or even a large loaf). Makes 12 and each muffin has (old) WW  value of 2,5 points.  If you don't care about calories, add 2-3 tbs melted butter or olive oil to the muffin mix, for better taste

Ingredients:
650-700 g chicken breast mince
1 large egg
1 egg white
6 tbs breadcrumbs
1/2 tsp dried basil
1/2 tsp oregano
2 garlic cloves, crushed
1/2  a small onion, chopped 
3/4 tsp salt
1/3 tsp black pepper
1/2 cup Parmesan cheese
Topping-
3/4 cup pasta sauce
1/2 cup  Mozzarella cheese
oil spray 
Method:
Preheat oven to 180*C, spray muffin tin  and sprinkle with 2 tbs crumbs. Mix all other ingredients (except for topping) and spoon into moulds. Bake for  15-20 minutes, then take out and spoon tomato sauce and sprinkle with Mozzarella; return to oven to melt. Take out, cool slightly and enjoy with crusty bread (or pasta / rice) and salad.



Pileći Mafini

Prakticnost ovog recepta je u tome da mjesavinu mozete oblikovati u niskokaloricne mafine ili snicle (ili veknu). Dovoljno za 12 komada; svaki nosi 2,5 poena na 'Weight Watchers' dijeti.
Ako ne brinete o kalorijama, dodajte 2-3 K otopljenog maslaca ili maslinovog ulja osnovnoj masi, za bolji ukus.

Potrebno:

650-700 gr mljevenih pilecih prsa
1 vece jaje
1 bjelance
6 K mrvica kruha / hljeba (prezle)
1/2 k suhog bosiljka
1/2 k origana
2 cena bijelog luka, protisnuta
1/2 manjeg crvenog luka, sjeckanog
3/4 k soli
1/3 k crnog bibera
1/2 solje parmezana, rendanog
Za povrsinski sloj-
3/4 solje paradajz sosa (kao za picu ili tjesteninu)
1/2 solje mocarela sira (ili slicno)
ulje u spreju 
Nacin:
Ukljucite rernu na 180*c, pripremite kalupe za mafine. Nanesite ulje u spreju i pospite sa 2 K mrvica. 
Pomijesajte sve sastojke (osim sosa i mocarele) i kasikom napunite mufin soljice. 
Pecite oko 15-20 minuta, izvadite zatim prelijte sa sosem i pospite mocarelom. Vratite u rernu da se otopi, zatim izvadite prohladite u uzivajte servirajuci sa dobrim hljebom / kruhom  (ili psatom, rizom...) i salatom.

Polish 'Lazy Pierogi'




Simple, comfort Polish food that tastes good!

Ingredients:
Dough-
500 g ricotta 
2 eggs 
1 yolk
1 tsp salt
2-3 tbs cream
2 cups flour (+)
2-3 tbs semolina
Butter / crumb mixture-
40-60 g butter
1/2 cup crumbs
Method:
Mix all ingredients in a bowl; you'll get a sticky dough. Place dough onto well floured surface; divide in 2 and roll into sausages. 
Place a large pan with salted water to boil. Cut dough sausages on diagonal to get pieroges. Place into boiling water (8-10 at a time) and cook for 5-7 minutes; take out onto absorbent paper. Repeat with the rest. Melt butter, add crumbs and cook for 2 minutes. Place pieroges into a bowl and sprinkle with crumbs.
Enjoy!




Poljske 'Lijene Piroške'

Jednostavno, zadovoljavajuce jelo Poljske, koje je odlicnog ukusa!

Potrebno:
Tijesto-
500 gr sira (rikota ili slicno)
2 jaja
1 zumance
1 k soli
2-3 K kajmaka / vrhnja
2 solje brasna (+)
2-3 K griza
Maslac / mrvice posip-
40-60 gr maslaca
1/2 solje mrvica
Nacin:
Umijesite sve sastojke za tijesto; dobicete ljepljivu masu, koju istresete na pobrasnjenu povrsinu. Podijelite na 2 dijela i rukama razvaljajte da dobijete 2 dugacka valjka (kobasice).
Stavite lonac sa zasoljenom vodom da prokljuca. Rezite valjke dijagonalno i ubacujte u kljucalu vodu, po 8-10 komada. Izvadite i ocijedite. Ponovite postupak sa ostalima.
Zagrijte maslac i proprzite mrvice. Smjestite piroske u posude za serviranje i pospite mrvicama. Uzivajte!

3 Cheese Pasta Sauce



Really quick and delicious meal. If you're very hungry choose smaller pasta - it will cook faster.

Ingredients:
500 g pasta (your choice)
Sauce-
1 cup cream
pinch of salt
1/3 tsp white pepper
100 g tasty, grated
100 g Parmesan, grated
100 g Mozzarella, grated
Nigella seeds and chilli flakes for decoration
Method:
Cook pasta according to packet instructions.
Place cream into a pan and bring to boil. Take off heat and add grated cheeses and seasoning; mix until melted. Place pasta onto serving bowl, pour the sauce over and decorate with nigella seeds and chilli flakes. Enjoy!

Tjestenina sa umakom od 3 vrste sira

Extra brzi i ukusni obrok. Ako ste jako gladni, izaberite sitniju tjesteninu - skuhace se brze.

Potrebno:
500 gr tjestenine, po vasem izboru
Umak / sos-
1 solja slatke pavlake / kajmaka / krema
malo soli
1/3 k bijelog bibera
100 gr 'Tasty' sira / tvrdi sir jaceg ukusa
100 gr Parmezana
100 gr Mozarele, svi rendani
Čurekot / crni sezam i komadici suhe crvene paprike za dekoraciju
Nacin:
Skuhajte tjesteninu po uputstvima na vrecici.
Zagrijte pavlaku do vrenja, skinite je sa vatre pa ubacite zacine i rendane sireve. mijesajte dok se sve ne stopi.
Stavite tjesteninu u posudu za sluzenje, prelijte sos preko i ukrasite po zelji.

Zucchini Rolls with Cream Cheese and Smoked Salmon


I want to let know all my blogger friends, that I'm unable to comment on many blogs!

This is an easy and decorative way of preparing zucchinis; Perfect finger food for parties.

Ingredients:
4-5 zucchinis, slice lengthwise (2 mm)
salt, olive oil, pepper (optional)
125 g cream cheese , smoked salmon flavor
125 g plain cream cheese
50-80 g smoked salmon, sliced into small pieces
chives to sprinkle
Method:
Salt zucchinis and brush with olive oil; set aside to wilt. (I grilled one side to speed up the process, but this is not necessary.)
Mix cheeses with salmon pieces. Spread each zucchini with this mixture and rool up. Place on serving plate and sprinkle with chives.


Rolne od Tikvica, sa krem sirom i lososom

Zelim da obavijestim moje blogger prijatelje, da sam u nemogucnosti da komentarisem na mnogim od njihovih blogova!

Dekorativan i lak nacin pripremanja tikvica; perfektni zalogajcici za zabave.

Potrebno:
4-5 tikvice, izrezane po duzini na 2 mm debljinu
so, maslinovo ulje, biber (po zelji)
125 gr krem sira sa ukusom dimljenog lososa
125 gr ovicnog krem sira
59-80 gr dimljenog lososa, rezanog na sitne komadice
vlasac za dekoraciju
Nacin:
posolite svaku tikvicu, premazite uljem i ostavite da omeksa. (Ja sam jednu stranu 'grilovala' da ubrzam proces, ali ovo nije neophodno)
Pomijesajte sireve i komadice lososa.
Premazite svaki komad tikvice sa ovom mjesavinom i zarolajte. Postavite na tanjir za sluzenje i pospite vlascem.

Cheese and Pesto Scrolls







I found this recipe some time ago on the Internet, and instantly became one of family favorites.

Ingredients:
Dough-
500 g flour
2 teas yeast
3-4 tbs olive oil
2 teas salt
around 400 ml warm water
Filling-
500-600 g Ricotta cheese
1 large egg
2-3 tbs grated Parmesan
2-3 tbs Basil pesto
Method:
Make a soft dough (using bread maker is OK), let it double.
Preheat oven to 180*C, line a Swiss roll tin with a silicon paper.
While dough is rising, make the filling. Mix all ingredients well.
Roll out the dough (when ready) to a 4-5 mm rectangle.
Spread filling onto the rolled dough, leaving 2 cm to one edge. Brush this edge with water and roll towards it. Cut into 1,5 cm pieces and place onto paper ('blossomed 'side up), with some space apart. Bake for 12-15 min, or until golden. Enjoy warm. Keep well frozen (if any left).




Pužići sa sirom i pestom

Recept je pronadjen na internetu; veoma brzo je postao favorit u mojoj porodici.

Potrebno:
Tijesto-
500 g brašna
2 kasicice instant kvasca
3-4 kasike maslinovog ulja
2 kasicice soli
oko 400 ml mlake vode
Punjenje-
500-600 g svježeg sira
1 vece jaje
2-3 kasike rendanog parmezana
2-3 kasike 
pesta od bosiljka 
Nacin:
Umijesite tijesto od sastojaka i ostavite na toplome mjestu da duplo naraste.
Pomijesajte sve sastojke za punjenje.
Ukljucite rernu na 180*C, pripremite pleh postavljajuci papir za pecenje.
Kada je tijesto spremno, razvaljajte ga na pravougaonik oko 4-5 mm debljine. Nanesite punjenje, ostavljajuci jedan kraj 2 bez fila. Njega premazite vodom, pa zamotajte prema njemu. Rezite na 1,5 cm krugove, postavite ih na papir sa 'rascvjetanom' stranom gore, ostavite malo razmaka izmedju. Pecite 12-15 min ili dok ne porumeni. Uzivajte dok su topli.
Dobri su i iz zamrzivaca (ako neki ostane).

Pork Cordon Bleu


Easy!

Ingredients:
4 boneless pork chops
4 slices thin ham (size as pork chops)
4 slices Swiss cheese, smaller than pork
1/2 teaspoon dried thyme leaves
salt and pepper
1 cup all-purpose flour
2 eggs, beaten with 1 tbs water
1 cup fine dry bread crumbs
oil for frying
Method:
On top of each piece of meat put a slice of cheese following with ham. Season flour with salt, pepper and thyme. Carefully dip 'parcels' into flour, shake off excess. Dip into egg, then bread crumbs and fry until golden. Serve hot.
Perfect with boiled potatoes (dressed with oil and wholegrain mustard) and corn.




Krmenadle 'Cordon Bleu' stil

Potrebno:
4 krmenadle bez kosti
4 reznja sunke (ili slicno, velicine kao krmenadle)
4 reznja nekog tvrdog sira (mora biti manji od mesa)
1/2 k timijana
so i biber
1 solja brasna
2 jaja, umuceno sa 1 K vode
1 solja krusnih mrvica/prezle
ulje za przenje
Nacin:
Polozite meso na radnu povrsinu, preko svakog komada stavite rezanj sira i sunke. Zacinite brasno sa solju, biberom i timijanom. Pazljivo uvaljajte obje strane, zatim uronite u jaja i mrvice. Przite dok ne porumeni sa obje strane. Servirajte toplo.
Perfektno uz kuhani krompir (zacinjen uljem i senfom od punog zrna)i mlade kukuruze.

Parmigiana Meal ( Pork and Eggplant)



You can use this recipe for veal, chicken or pork. Meat should be thinly sliced, and flatened.

Ingredients:
4 boneless pork chops
1 large eggplant
Salt and pepper
2 large eggs
flour and bread crumbs for coating
Tomato sauce
Parmesan + Mozzarella for sprinkling
Method:
Cut eggplant into 1 cm slices, sprinkle with salt, leave aside to sweat(10-15 min). Rinse and squeeze them between 2 paper towels. Season pork chops.
Prepare 3 bowls: for eggs (beat slightly), flour and bread crumbs.
Heat oil in a pan. Dip eggplant slices and pork chops (one by one) into flour, then eggs, then bread crumbs. Fry on medium high for 3-4 minutes, or until golden. Leave them on paper towel to get rid of excess oil.
Layer eggplant and pork into an ovenproof dish. Spoon tomato sauce (as much or less as you like), sprinkle with Parmesan then Mozzarella Cheese. Put in hot oven (or under the grill) for 5 minutes, or until cheese starts melting. Serve hot.



'Parmidjana' obrok (Svinjski kotleti i patlidzan)

Potrebno:
4 kotleta, bez kostiju
1 veci patlidzan
so i biber
2 veca jajeta
brasno i mrvice za pohovati
Ulje za przenje
Paradajz Sos
Parmezan i Mocarela za posuti
Nacin:
Izrezite patlidzane na snite, posolite ih i ostavite 15 minuta da se ocijede. Isperite i istisnite suvisnu tecnost. Zacinite meso.
U 3 posude pripremite: umucena jaja, brasno i mrvice.
Zagrijte ulje u tavi. Patlidzan i meso uvaljajte u brasno, zatim jaja i onda mrvice. Przite do zlatno-zute boje.
Poredajte po vatrostalnoj posudi. Prelijte sa paradajz sosem (onoliko koliko volite). Pospite Parmezan i Mocarelu po povrsini i zapecite, dok se sir ne rastopi. Servirajte toplo.

Apple (Cheese and Cherries) Strudel



Some of my lovely followers asked for 'Apple Strudel' recipe. Here it is!

Ingredients:
Pastry-
1,5 cup flour
1 egg
pinch of salt
1 tbs oil
water enough to make 150 ml fluid - read instructions
Filing-
1 kg apples (green), peeled, cored and grated
1/3 cup sugar (white or brown)
1/2 teas cinnamon
1/3 cup Sultanas (optional)
2-3 tbs biscuit (or bread) crumbs
125 g melted butter
(for cheese/cherry version you'll need
400g Ricotta
1 egg
1/3 cup sugar
1 cup Cherries
1 tbs corn flour)
Method:
Sift the flour into a bowl, add salt. Break the egg in a measuring cup, beat and then top up with water, making up 150 ml of egg/water liquid. Pour into flour, add oil and quickly mix everything together. Take out on a floured surface and knead until smooth; use flour all the time. Dust with flour on both sides and cover with a clean cloth. Let it rest for 25-30 minutes.
Meanwhile, prepare surface for pastry and filings.
Cover large surface (dinner table) with a clean cloth, dust with flour.
Grate apples, set aside (for cheese/cherry strudel: mix 400-500 g ricotta with 1 egg and 1/3 cup sugar and 1 cup cherries+ 1 tbs corn flour).
After 1/2 hour of resting, dust dough with flour and roll out to 50-60 cm in diameter. Spoon 3-4 tbs of melted butter (not hot), and spread with your fingertips.
Now, with your palms (or backhands) try to stretch the dough as much as possible - a little at a time, going around all the time. Don't worry if the dough breaks.
On one side of the dough spoon the apples, which you have slightly squeezed out. Spoon sugar and cinnamon, sprinkle with crumbs. Pour some more melted butter all around the pastry and filing. Start rolling (lifting the cloth) to the other end. Place strudel in an buttered dish, brush some melted butter on top and bake for 25-30minutes ion 180*C. (if you're making cheese strudel use your filing instead of apples.
When baked, sprinkle with icing sugar (optional). Enjoy!




Štrudla sa Jabukama (ili sirom i višnjama)

Potrebno:
Tijesto-
1,5 solja brasna (250ml)
malo soli
1 jaje
vode toliko da sa jajetom napravite 150 ml tekucine (vidi objasnjsnje)
1 kasika ulja
Punjenje-
1 kg jabuka, ociscenih i rendanih
1/3 solje secera
1/2 kasicice cimeta
2-3 kasike mrvica keksa (ili hljeba/kruha)
1/3 solje grozdjica (po zelji)
(za sir/visnje verziju
400 gr sira
1 jaje
1/3 solje secera
1 kasika gustina / brasna)
Nacin:
Prosijte brasno, dodajte malo soli. Umutite jaje, naspite na njega toliko vode da imate 150 ml tecnosti. Dodajte ulje pa ovime umijesite mekano tijesto.
Pospite brasnom, pa ostavite pokrivenoodmarati oko 30 min.
Pripremite punjenje. Izrendajte jabuke, ostavite po strani(ili umijesajte sve sastojke za sir/visnje verziju).
Pripremite povrsinu za rad - na cist stolnjak nanesite brasno.
Razvaljajte tijesto do velicine 50-60 cm u precniku. Nanesite 3-4 kasike otopljenog maslaca (ne smije biti vreo). Razmazite po povrsini koristeci vase vrhove prstiju. Pocnite rukama razvlaciti tijesto od sredine prema krajevima, malo po malo i ideci u krug.
Na jednu stranu tijesta nanesite svoje punjenje. Ako radite sa jabukama: pospite malo mrvica, iscijedite blago jabuke, nanesite, pospite secerom i cimetom i ostatkom mrvica.
Ako radite sa sirom: pomijesajte sve namirnice zajedno i nanesite.
Poprskajte tijesto i punjenje sa maslacem pa pocnite savijati prema drugoj strani (moze uz pomoc stolnjaka). Prebacite u posudu za pecenje, premazite maslacem i pecite na 180*C oko 25-30 minuta. Malo prohladjeno, pospite secerom u prahu i uzivajte!

Alps' Torte


Wonderful cake from Alps.

Ingredients:
-Base
3 large eggs
100 g caster sugar
120 g butter, very soft
120 g poppy seeds, grounded
3 tbs biscuit crumbs (or bread crumbs)
-Cheese layer
450 g Ricotta cheese
1 cup sour cream
120 g caster sugar
1 teas vanilla essence
zest of 1 lemon
juice of 1/2 lemon
4 large eggs
3 tbs flour
-Cherry topping
1 cup sour cherries (caned)
1 cup cherry juice (from can)
1,5 tbs corn flour (or other starch)
Method:
Preheat oven to 170*C. Prepare a cake tin (22 cm).
Beat eggs with sugar until pale and fluffy. Add butter, mix well then fold in crumbs and poppy seeds. Bake 5-6 minutes.
Meanwhile, beat all ingredients for cheese layer with a mixer. Pour over poppy seed base and bake for another 40 minutes. Take it out and let cool.(While stil warm, push edges down to level the surface.)
Mix some cherry 'juice' with corn flour, add the rest of juice and boil until thick (Microwave is OK). Add cherries, mix well and top the cake.
Let it cool/rest for 1 hour before slicing.



Alpska Torta

Potrebno:
-Biskvit
3 veca jaja
100 gr sitnog secera
120 omeksalog maslaca
120 gr maka, samljevenog
3 kasike mrvica keksa (ili hljeba/kruha)
-Sloj sa sirom
450 gr mladog sira (Rikota)
1 solja kajmaka/pavlake
120 gr sitnog secera
1 kasicica vanile
ribana korica 1 limuna
sok 1/2 limuna
4 veca jaja
3 kasike brasna
-Preliv sa Visnjama
1 solja visanja iz kompota/konzerve
1 solja 'soka' iz kompota
1,5 kasika 'Gustina'
Nacin:
Ukljucite rernu na 170*C, pripremite 22 cm obruc za torte.
Miksajte jaja sa secerom dok ne postane gusta smjesa, ubacite maslac, promijesajte, pa dodajte mak i mrvice. Promijesajte rukom i izlijte u kalup. Pecite 5-6 minuta.
U medjuvremenu, pomijesajte sve sastojke za sloj sa sirom. Izlijte na biskvit i nastavite peci jos 40 minuta. Izvadite i ostavite da se prohladi (dok je jos toplo malo potisnite ivice torte da izravnate povrsinu)
Za preljev sa visnjama - pomijesajte malo soka sa Gustinom, dodajte ostatak soka, pa sve zajedno prokuhajte, dok se ne zgusne (moze i u mikrovalnoj). Ubacite visnje, promijesajte, pa nanesite na povrsinu torte. Ostavite je odmarati 1 sat prije posluzivanja.

Ricotta Filled Pleated Bread


Great for picnics or school lunches. You can make them as small as you like.

Ingredients:
-Dough
1 cup water
2 tbs olive oil
2 cups plain flour
1 cup wholemeal flour
1 teas salt
1 teas sugar
1,5 teas yeast
-Filling
300 g ricotta
1 teas salt
1 egg, beaten
a few basil leaves, cut into strips (optional)
Method:
Mix all dry ingredients, add lauke warm water and oil and make a soft dough. Knead for 5 minutes.(Or you can use your bread making machine). Leave it to double in size (45 minutes).Meanwhile, prepare filling - mix all ingredients well, set aside.
Dust dough with flour, divide into 2 and roll out 2 rectangles. On each rectangle put filling in the middle part, cut strips on the sides,fold first upper and lower part (to protect filling from running out) and start pleating - see foto.
Bake 20 minutes at 180*C.



Pletenica Filovana Sirom

Potrebno:
- Tijesto
1 solja vode
2 kasike maslinovog ulja
2 solje brasna obicnog
1 solja brasna od punog zrna
1 kasicica soli
1 kasicica secera
1,5 kasicica kvasca
- Filovanje
300 gr sira (rikota - mladi sir)
1 jaje
1 kasicica soli
nekoliko listova bosiljka, sjeckanog (po zelji)
Nacin:
Umijesite tijesto kao za bilo koje dizano i ostavite odmarati.
Pripremite filovanje - pomijesajte sir dobro sa ostalim sastojcima.
Kada je tijesto nadoslo, podijelite na 2 i razvaljajte svaki dio u pravougaonik. Na sredinu svakog pravougaonika, stavite polovicu filovanja, prorezite trake sa strane. Najprije zavrnite donju i gornju stranu, kako filovanje ne bi curilo, zatim pocnite prebacivati trake sa svake strane na suprotnu - fotografija!
Pecite 20 minuta na 180*C.
Mozete napraviti i sasvim male (kifle).

Cottage Walnut Pesto Mushrooms


'Weight Watchers' recipe. Unusual combination, excellent taste, low calories.

Ingredients:
12 large, or 6 giant mushrooms, stems removed
1/2 medium onion, finely chopped
30 g walnuts, chopped
120 g Cottage cheese
1/2 cup carrots, grated
10-20 g bread crumbs
1/2 tbs soy sauce
1-2 tbs Basil Pesto
Method:
Preheat oven to 180*C. Sprinkle mushrooms with 1/2 bread crumbs.
Place walnuts, cheese, onion, and soy sauce into food processor. Process until fine.
Stir in carrot and pesto. Mix well and spoon the mixture into mushrooms. Sprinkle with the rest of bread crumbs. Bake for 10-12 minutes. Serve hot or cold.

Šampinjoni filovani Sirom, Orasima i Pestom

Potrebno:
12 vecih, ili 6 ogromnih Sampinjona, odstranite drske
1/2 srednjeg luka, sitno sjeckanog
30 gr oraha, sjeckanih
120 gr uzrncenog sira
1/2 solje rendane mrkve
10-20 gr suhih mrvica hljeba/kruha
1/2 kasike soja sosa
1-2 kasike Basil Pesto
Nacin:
Ukljucite rernu na 180*C. Pola kolicine mrvica pospite po gljivama.
U elektricnoj sjeckalici isjeckajte sve sastojke, osim mrkve i pesta, koje cete dodati naknadno i promijesati. Ovime filujte gljive, pa pospite sa preostalim mrvicama. Pecite 10-12 minuta. Sluzite toplo ili hladno.
