Apple, Carob and Rhubarb Pie




I had some carob powder in my freezer that needed to be used (brought from Bosnia 2 years ago). After researching internet for a new recipe, I found some ideas on how I want it to make - pie with some fruit on bottom!
 I was delighted with results, especially after reading about nutrition and health benefits that carob offers. It's believed that has aphrodisiac effects too.

Ingredients:
-Pastry
2 cups flour
150 g butter
2 yolks
2-3 tbs icing sugar
2-3 tbs water
-Filling
250 g carob powder
180 g brown sugar 
300 ml milk
100 ml olive oil
2 egg whites, beaten
-Fruit layer (red fruit looks good inside)
2 apples, sliced
250 g rhubarb  (or other fruit)
1-2 tbs semolina
2-3 tbs icing sugar
1 tsp cinnamon 

Method:
First make filling - place milk, sugar and carob in a pan. Bring it to boil, cover and let it cool. When cool, add oil and egg whites. Mix well.
Preheat oven to 170-180*C.
Pastry - Rub butter pieces into flour (or process it), add yolks and cold water. Knead until soft dough formed. Roll out to a 40 cm circle (for a 27 cm pie ). Place it into pie dish. 
Mix fruit / rhubarb with icing sugar and semolina. Place it on bottom of pie dish (over the dough).  Spoon carob mixture over it.  Tap dish on working surface a few times, so carob mixture sits better between fruit pieces. Place pie into oven and bake for 45 minutes.



              

Pita sa Rogacem, Jabukama i Rabarbarom


Imala sam pakovanje rogacevog brasna u zamrzivacu koje je trebalo iskoristiti,  jer je preostalo od proslog odmora u Bosni prije 2 godine. Poslije malo istrazivanja na internetu, pronasla sam nacin kako sam ga zeljela utrositi - pita od rogaca sa vocem na dnu. 
Bili smo odusevljeni rezultatom, posebno kada sam procitala o  hranjivim vrijednostima i zdravstvenim beneficijama koje rogac pruza. Izvojicu to da mnogi misle da je odlican afrodizijak.

Potrebno:
-Tijesto
2 solje brasna
150 gr maslaca, komadici
2 zumanca
2-3 K secera u prahu
2-3 K vode, hladne
-Fil
250 gr rogacevog brasna
180 gr braon secera
3 dl mlijeka
1 dl maslinovog ulja
2 bjelanca, ulupana
-Vocni sloj (crveno voce izgleda dobro u piti)
2 jabuke, izrezane
250 gr rabarbare (ili drugog voca )
1-2 K krupice / griza (sitni)
2-3 K secera u prahu 
1 k cimeta

Nacin:
Najprije napravite fil- Stavite mlijeko, secer i rogac u posudu. Zagrijte do kljucanja, poklopite i ostavite hladiti. kad se ohladi umijesajte ulje i bjelanca.
Zagrijte rernu na 170-180*C.
Tijesto - Utrljajte maslac u brasno, dodajte zumanca i vodu i umijesite. Ovo mozetet uciniti sa elektricnom sjeckalicom. Ravaljajte tijesto u 40 cm krug (za 27 cm pitu). Smjestite tijesto u obruc / posudu za pite. 
Pospite griz i secer  preko voca / rabarbare, promijesajte. Smjestite voce na dno preko tijesta, zatim prebacite masu sa rogacem. Malo lupnite posudu o radnu povrsinu, kako bi sn=mjesa bolje ulegla izmedju voca. Pecite oko 45 minuta.

'Bulochki' - Russian Sweet Buns with Apple Filling




Do you watch Winter Olympic Games? If you do, these Russian sweet buns will make you feel  as you were in Sochi.  Experience complete!

Ingredients:
Dough-
3 cups flour
2/3 cup (skin) warm milk
3 tbs sugar
2 tsp yeast
2 eggs, beaten (leave 1/2 egg white for brushing)
125 g butter, melted
Apple filling-
5-6 apples (Granny Smith),peeled and diced
2/3 cup (+,-) sugar
juice of 1/2 lemon
vanilla extract
cinnamon (optional)

Method:
Make a dough as you would any with yeast; by bread machine or by hand. Cover and leave on a warm spot (45 min).
Place apples and sugar into a pan. Bring to boil and cook for 10 minutes. Add lemon juice and vanilla (+ cinnamon if using). If there is too much liquid left, you'll need to drain it. Let it cool
Divide the dough into 20 balls. Roll each into an oval, then fill with a full tsp of apple stuffing. Press the dough along the edges well, and place the 'seam' down onto prepared baking pan (with paper). Leave some space for spreading, between buns. Cover and leave 45 minutes, then brush with a beaten egg white and bake for 12-15 minutes on 180*C. Serve warm or cold.




Ruske Slatke Kifle sa punjenjem od Jabuka (Bulochki)

Gledate li Zimske Olipijske Igre? Ako da, ove slatke Ruske kifle ce uciniti da osjecate kao da ste u Sociju. Kompletan ugodjaj!

Potrebno:
Tijesto-
3 solje brasna
2/3 solje mlijeka, mlakog
3 K secera
125 g maslaca, otopljenog
2 jaja, umucenih (ostavite 1/2 bjelanca za premazivanje)
2 k instant kvasca ( ili svjezeg)
Fil od jabuka
5-6 zelenih jabuka, oguljene i  sjecene na kockice 
2/3 solje (+,-) secera
sok 1/2 limuna
vanila 
cimet (opciono)  

Nacin:
Umijesite tijesko kao sto biste bilo koje drugo dizano; pokrijte i ostavitena toplom mjestu.
Jabuke i secer stavite na vatru i kuhajte oko 10 minuta. Ubacite sok limuna i vanilu. Ohladite. (Ako je mnogo tecnosti ostalo, procijedite)
Podijelite tijesto na 20 loptica, razvucite svaku u oval i punite sa po 1 kasicicom fila. Pritisnite krajeve tijesta dobro (duza strana) i okrenite bolju stranu gore, smjestajuci na tepsiju (sa papirom). Ostavite malo razmaka izmedju kifli. Pokrijte i ostavite oko 45 minuta na toplome, zatim premazite bjelancetom i pecite 12-15 minuta na 180*C. Uzivajte dok su tople ili kada se ohlade.

Apple and Rhubarb Crumble Pie


I  met Rhubarb on  Wednesday for the first time. The whole experience of learning about it in a new recipe, left so good impression at me that I made the same thing again  today. This simple pie is making my weekend!

Ingredients:
Shortcrust pastry-
    1 ¼ cups plain flour
    1/3 cup icing sugar
    ¼ cup almond meal
    125g butter, from fridge cut into cubes
    1 egg yolk
    1-2 tbs cold water

Crumble-
¼ cup firmly packed brown sugar
¼ cup blanched almonds
½ teaspoon cinnamon
1/3 cup rolled oats
50g cold butter, cubed


Filling-
2  apples, peeled, cut in chunks
5 stalks (200g) rhubarb, sliced
2 tablespoons white sugar 
1 tbs semolina or biscuit crumbs
For  glazing-
1 egg white, lightly beaten
2 tablespoons raw sugar, to sprinkle (optional)  

Method:
Process flour with butter (or use your finger tips for rubbing), add other ingredients for dough and make a soft dough. Wrap into glad wrap and let it rest in a cool spot.
Place all ingredients for crumble into a food processor and pulls until large crumbs formed. Leave it aside.
Mix all ingredients for filling.
Switch oven to 170 *C.
Place dough between 2 pieces of baking paper and roll into a large circle (about 2-2,5 mm thick). Spoon a bit of crumble on bottom of pastry, place 1/2 of apple/ rhubarb mixture, add half of left crumble, then again apple/rhubarb and top with crumble. Bring sides of pastry up over the side of pile; press slightly with your fingers. Brush with egg white (and sprinkle with sugar if desired) and place in oven. Bake for 40-45 minutes, or until pastry becomes golden and filling slightly collapsed. 
 Let it cool before slicing. Enjoy!



Izmrvljena Pita sa Jabukama i Rabarbarom

 Rabarbaru sam 'upoznala' u  srijedu!  Ostavila je tako dobar utisak na mene, da sam cijeli postupak  odlucila ponoviti danas, koristeci isti (novi) recept. 
Ova jednostavna pita ce uljepsati  moj vikend.

Potrebno:
Tijesto-
1 1/4 solje brasna
1/3 solje secera u prahu
1/4 solje mljevenih badema
125 gr maslaca, iz frizidera
1 zumance
1-2 K hladne vode

Mrvice-
1/4 solje braon secera
1/4 solje badema, mljevenih ili sjeckanih
1/2 k cimeta
1/3 solje presovane zobi / jecma
50 gr hladmog maslaca, rezanog na kockice

Fil-
2 jabuke, oguljene i isjecene na komade
5 stabljika rabarbare, izrezane sitno 
2 K secera
1 K griza / krupice ili mrvica keksa

 Za glazuru-
1 bjelance, blago umuceno
2 K zutog secera, za posuti po tijestu (opcija)

Nacin:
Istrljajte brasno i maslac prstima pa dodajte ostale sastojke i umijesite tijesto. Naravno, ovaj postupak mozete uciniti sjeckalicom. Zamotajte tijesto u plasticnu foliju i ostavite na hladnom mjestu da se odmori.
Isjeckajte (u elek. sjeckalici) sve sastojke za mrvljeni dio. Treba da dobijete krupnije formirane mrvice. Ostavite po strani.
Izmijesajte sastojke za fil.
Ukljucite rernu na 170*C.
Postavite tijesto izmedju 2 komada papira za pecenje i razvaljajte veci krug oko 2-2,5 mm debljine. Pospite sredinu kruga sa malo 'mrvica', zatim stavite polovinu fila, polovinu preostalih mrvica, ponovo fil i na kraju mrvicastu masu. Podignite ivice tijesta, skupite ih prstima i priticnite blago uz fil. Premazite tijesto bjelanjkom (i pospite secerom ako zelite)
Stavite u rernu i pecite oko 40-45 minuta. Izvadite i prohladite prije rezanja. Uzivajte!

Apples in Chocolate Cake



3 years ago I posted my first recipe. Since then I wrote  350 posts, gained 300 followers and more than 230 000 visits.  Great milestone, as I didn't think I would last so long. For that occasion, I made a beautifully moist and gluten free cake. Cheers!

Ingredients:
7-8 small apples, peeled and cored (left whole)
5 eggs
200 g sugar
120 g butter, melted
150 gr walnuts (or other nuts), grounded
40 g cocoa
1 tsp vanilla
Method:
Preheat oven to 170*C. Prepare a 22 cm spring form, line with baking paper.
Beat sugar and eggs, until light and fluffy. Add melted butter, walnuts and cocoa. Fold in.
Place apples  inside of spring form  close to the edge (but not touching them). Pour prepared mixture, making sure that wholes on apples are filled too. Bake for 45-50 minutes, or until inserted toothpick comes out clean. Cool slightly, then turn over onto serving plate, take the paper off, slice and serve with cream (optional)


 Jabuke u  Čokoladnom kolaču

Na danasnji dan, prije 3 godine je krenuo moj prvi post. Od tada  sam napisala 350 postova, dobila 300 sljedbenika i vise od 230 000 posjetilaca. Nije lose, obzirom da nisam mislila da cu trajati tako dugo. Za tu priliku evo jednog socnog kolaca bez glutena. U zdravlje!

Potrebno:
7-8 manjih jabuka, oguljene i izvadjena sredina (ostavite ih cijele)
5 jaja
200 gr secera
120 gr maslaca, otopljenog
150 gr oraha (ili drugih orasastih plodova), samljevenih
40 gr kakaa
1 k vanile
Nacin:
Ukljucite rernu na 170*C, pripremite obruc za torte i postavite pepir za pecenje na njega.
Miksajte secr sa jajima, dok ne uspjeni. Dodajte maslac, orahe i kakao. Rucno umijesajte.
Postavite jabuke na pleh u krug, ali da ne dodiruju ivice obruca. Uspite pjenasu smjesu, pazeci da i supljine u jabukama ispunite. Pecite oko 45-50 min, ili dok ubodenu cackalicu ne izvucete sasvim suhu. Prohladite, izvrnite naopako na tanjir za serviranje, skinite papir i izrezite. Servirajte sa tucenim vrhnjem (po zelji)

Flodni / Fluden


After months and months of researching and hesitating, finally I  found a good reason to make this famous  Hungarian-Jewish cake. Traditionally, it's made in a form of slices (rectangle); I decided to bake it in  form of a round (birthday) cake. It does take time, but it's not overly complicated. Result is so worth; 5 layers of pastry, 4 layers of filling...all melting in your mouth.

Ingredients:
-Pastry
500 g flour
250 g butter, diced
100 g icing sugar
2 yolks
1 egg, beaten (reserve 2 tbs for brushing top pastry layer)
120 ml white wine (or apple juice)
-Poppy seed filling
250 g poppy seeds, grounded
120 g sugar
2-3 tbs honey
120 ml white wine (or apple juice)
zest of 1/2 orange (or lemon, or mandarin)
1-2 tbs rum (optional)
-Apple filling
1 kg apples, peeled and grated (7- 8 apples)
100 g sugar
1-2 tsp cinnamon
1 tbs semolina
-Walnut filling
250 g walnuts, grounded
120 g sugar
100 ml white wine (or apple juice)
-Final filling
500 g  (a jar) of thick plum / prune jam
1/2 tsp cinnamon (optional)

Method:
Pastry- rub butter pieces with flour (it's ok to use food processor) , add other ingredients and make dough. Divide into 5, cover with a cloth and let it rest.
Poppy seed and walnut fillings- Put all ingredients (separately) in 2 pans; cook for few minutes (I use microwave for this). Let it cool.
Apple filling- Grate apples. Let them rest 5 minutes, then squeeze excess juice. Mix apples with sugar, cinnamon and semolina.
Plum filling- mix plum jam with cinnamon.
Roll out 3 parts of the dough  slightly bigger than tin which you're going to use (25 cm circle in my case); prick with fork and bake each for 5-6 minutes (they will shrink slightly).
Now you have 2 unbaked and 3 baked pastries.
Assembly-
1- Unbaked pastry at the bottom of a cake tin
2- Poppy seed filling
3- Baked pastry
4- Apple filing
5- Baked pastry
6- Walnut filling
7- Baked pastry
8- Jam filling
9- Unbaked pastry
Brush top of the dough with remaining egg, prick with fork and place in oven 180*C for 10 minutes, then lower to 160-170 *C and bake for another 40 minutes. Let it rest overnight before slicing.

Nakon mjeseci i mjeseci istrazivanja i neodluke, konacno je stigao dan (i razlog) da pokusam napraviti ovaj poznati Madjarsko-Jervejski kolac.  Tradicionalno se pravi u obliku pravougaonika; Ja sam odlucila da ga napravim  u okruglom obliku (rodjendanske) torte. Treba vremena za njega, ali nije pretjerano komplikovan. Rezultat vrijedi ulozenog truda; 4 sloja razlicitih filovanja, odvojeni sa 5 slojeva tijesta, koji se tope u ustima.
Sretan rodjendan mom  dragom M!


Potrebno:
-Tijesto
500 gr brasna
250 gr maslaca, sjecenog na kockice
100 gr secera u prahu
2 zumanca
1 jaje, umuceno (odvojite 2 K za premazivanje)
120 ml bijelog vina (ili soka jabuka)
-Fil od maka
250 gr maka, mljevenog
120 gr secera
2-3 K meda
120 ml bijelog vina (ili soka jabuka)
ribana korica 1/2 narandze (limun ili mandarina)
1-2 K ruma (po zelji)
-Fill od jabuka
1 kg jabuka, izrendanih (7-8 jabuka)
100 gr secera
1-2 k cimeta
1 K griza

-Fil od oraha
250 gr mljevenih oraha
120 gr secera
100 ml bijelog vina (ili soka jabuka)
- Fil od dzema
500 gr (1 tegla) gustog dzema od sljiva
1/2 k cimeta (po zelji) 
Nacin
Umijesite tijesto (utrljajte maslac u brasno i dodajte ostale satojke), podijelite na 5, pokrijte i ostavite odmarati.
Stavite sastojke za filove od maka i oraha u 2 odvojene posude. Prokuhajte par minuta (ja sam to radila u mikrovalnoj). Ostavite prohladiti.
Jabuke izrendajte, ostavite 5-10 minuta, onda istisnite sok. Pomijesajte jabuke sa secerom, cimetom i grizom.
Pomijesajte dzem sa cimetom.
Razvucite 3 kruga ili cetvorougaonika malo veca od vase tepsije. Nabodite tijesto i pecite svaki krug oko 5-6 minuta. 
Slaganje-
1- Nepeceni krug tijesta (na dno tepsije / obruca)
2- Fil od maka
3- Peceni krug tijesta
4- Fil od jabuka
5- Peceni krug tijesta
6- Fil od oraha
7- Peceni krug tijesta
8- Fil od dzema
9- Nepeceni krug tijesta 
Premazite povrsinu sa preostalim umucenim jajetom, nabodite viljuskom i smjestite u rernu na 180*C oko 10 minuta, zatim smanjite na 160-170*C i pecide jos 40 minuta dodatno. Najbolje rezati sljedeci dan!

Salzburger Brezen - Apple Stuffed Soft Pretzels



Salzburg is one of World's most beautiful cities. I was lucky to be able visiting it several times.
From every place that I travel to, I try to take something specific and useful with me, so it can remind me of my time spent there. Sometimes it's bed linen, sometimes an art work, tablecloth... From Salzburg, I took this recipe! Every time I make these pretzels, we (my family) recall fabulous time we had there.

Ingredients:
-Dough
4 1/2 cups bread flour
2 tbs sugar
1 tsp salt
2 tbs milk powder
1 1/2 tsp yeast
60 g melted butter
1 1/2 cups water
-Filling
5 apples (Granny Smith)
50 g butter
1/2 cup sugar
1/2 -1 tsp cinnamon
-Egg white, beaten, for brushing
Method:
Make a soft dough (by hand, mixer, or bread machine). Let it double in a warm spot.
Peel and slice apples. Place them into a pan with other ingredients; cook for 20 minutes. Cool it.
Place the dough (after rising) onto clean towel dusted with flour. Roll out to a rectangle 60 cm X 40 cm. Then cut 12 strips (40 x 5 cm). Place apple stuffing into a piping bag, then squeeze it onto each dough strip. Wet sides of dough and pinch them together into a rope. Rool slightly between working surface and your hands, then shape into a pretzel. Place all pretzels on lined baking pan, cover and let it rest for 30 minutes.
Preheat oven to 180*C. Brush risen pretzels with an egg white. Bake them for 15 minutes, or until golden.





Salzburške Perece punjene Jabukama


Salzburg je jedan od najljepsih gradova svijeta. Posjetila sam ga nekoliko puta.
Iz svakog mjesta koje posjetim, trudim se ponijeti nesto sa mnom, tako da me moze podsjetiti na vrijeme provedeno tamo. Ponekad su to carsafi, nekada umjetnick slika, stolnjak... Iz Salzburga sam ponijela sljedeci recept. Svaki put kad pravim ove perece, podsjetimo se na ovaj divni grad i nase vrijeme provedeno u njemu.

Sastojci:
-Tijesto
4,5 solje brasna
2 K secera
1 k soli
2 K mlijeka u prahu
1,5 k kvasca
60 gr otopljenog maslaca
1,5 solja vode
- Fil
5 jabuka
50 gr maslaca
1/2 solje secera
1/2 - 1 k cimeta
- Bjelance, umuceno, za premazivanje
Nacin
Umijesite tijesto (rucno ili mikserom), pokrijte i ostavite na  toplome da nadodje.
Ogulite i izrezite jabuke. Stavite ih u posudu sa ostalim sastojcima. Kuhajte oko 20 minuta. Prohladite.
Postavite nadoslo tijesto na pobrasnjen stolnjak. Razvucite i pravougaonik 60 x 40 cm. Izrezite 12 traka 40 x 5 cm. Stavite smjesu sa jabukama u poslasticarsku vrecicu; nanesite sloj na svaku traku. Navlazite krajeve tijesta i pritisnite prstima, formirajuci 'konopac'. Malo jos protrljajte svaki i formirajte perece. Smjestite na tepsiju sa papirom i pokrijte krpom. Ostavite odmarati 30 minuta. 
Ukljucite rernu na 180*C. Premazite perece sa bjencem i pecite oko 15 minuta, ili dok ne postanu zlatno-zute.

German Apple Strudel (Apfelstrudel)


My favorite desserts are those made with apples, and this recipe is on the top of my list!

Ingredients:
Dough-
2 cups flour
1 egg, beaten
1 tbs oil
pinch of salt
220 (+) ml water
Filling-
7-8 apples, peeled, sliced ('Granny Smith' are the best)
120 g butter
1 cup breadcrumbs
1/2 cup sultanas
1 tbs rum
zest 1/2 lemon
1/2 cup sugar
3-4 tbs apricot jam
1-1,5 teas cinnamon
melted butter, extra for pastry
egg, beaten for brushing
Method:
For making and stretching dough, see Apple Strudel recipe
Filling-
Melt butter in a pan, add breadcrumbs and fry for a minute. Set aside to cool.
Pour rum over sultanas, leave aside.
Preheat oven to 180*C (160 fan forced), grease a large baking tin.
When dough ready (stretched), mix all ingredients for filling and place along one side of pastry. Roll the filling (with help of tablecloth) to the other side, making sure to fold sides of pastry, so filling doesn't come out during baking.
Place strudel onto baking tin (shape into semicircle if doesn't fit), brush with beaten egg and bake for 45 minutes.
Before cutting and serving, dust with icing sugar.





Njemačka Štrudla sa jabukama (Apfelstrudel)

Najdrzi su mi kolaci sa jabukama; a ovaj je definitivno na vrhu popisa!

Potrebno:
Tijesto-
2 solje brasna
1 jaje, umuceno
1 K ulja
prstohvat soli
220(+) ml vode
Punjenje-
7-8 jabuka, oguljenih i sjeckanih (one sa zelenom korom su najbolje)
120 gr maslaca
1 solja suhih mrvica hljeba / kruha
1/2 solje grozdjica
1 K ruma
ribana korica 1/2 limuna
1/2 solje secera
3-4 K dzema kajsija / marelica
1-1,5 k cimeta
istopljeni maslac za prskati tijesto
jaje umuceno za premazivanje
Nacin:
Umijesite glatko tijesto od sastojaka. Pogledajte ovdje nacin i razvlacenje:
Recept za strudlu
Punjenje-
Zagrijte maslac, kratko propzite mrvice u njemu. Prelijte grizdjice sa rumom, ostavite po strani.
Zagrijte rernu na 180*C (160 sa fenom), nauljite vecu plitku tepsiju.
Kada ste tijesto razvukli, pomijesajte sve sastojke za punjenje. Nanesite na jednu stranu tijesta. Poprskajte tijesto i punjenje sa istopljenim maslacem. Zarolajte uz pomoc stolnjaka, pazeci da krajeve savijete, kako punjenje ne bi ispalo. Prebacite na tepsiju, mozete saviti strudlu kao potkovicu ako je prevelika.
Premazite umucenim jajetom i pecite oko 45 min.
Pospite sa secerom u prahu prije rezanja i sluzenja.

Apple Pie Aussie Style


One of best and most loved desserts in the World.

Ingredients:
Pastry-
150g cold butter, roughly chopped
1/4 cup caster sugar
1 cup plus 1 tbs plain flour
1/2 cup plus 1 tbs self-raising flour
1 large egg, lightly beaten
About 1 1/2 teaspoons caster sugar, for sprinkling on top of pie
Filling-
8 large (Granny Smith) apples
juice of 1/4 lemon
30 g unsalted butter
1/2 cup caster sugar
1 tsp ground cinnamon
Method:
Put all pastry ingredients into a food processor. Process until it becomes incorporated. Take out, knead a bit, wrap and let it rest.
Meanwhile, peel and cut apples. Place them in a saucepan with 1 tbs water, lemon juice, butter, sugar and cinnamon. Cook until soft.
Preheat oven to 180*C; Prepare a pie dish.
Divide dough into 2 balls (one should be bigger); Roll out the dough into 2 circles. Put larger one into the pie dish, spoon apple filling onto it, cover with smaller dough circle. Press the edges with your fingers. Brush with water and sprinkle with sugar. Bake for 25-30 minutes, or until golden. Enjoy while still warm.



Australijska Pita sa Jabukama

Potrebno:
Tijesto-
150 gr maslaca iz frizidera, izrezanog
1/2 solje sitnog secera
1 solja + 1 K brasna
1/2 solje + 1 K samodizajuceg brasna
1 vece jaje, umuceno
oko 1,5 k sitnog secera, za posuti po piti
Filovanje-
8 vecih jabuka (zelene su najbolje)
sok od 1/4 limuna
30 gr maslaca
1/2 solje secera
1 k cimeta
Nacin:
Sve sastojke za tijesto stavite u sjeckalicu i ukljucite. Mijesajte dok se sastojci ne ujedine. Izvadite i jos malo mijesite rukom, umotajte u prozirnu foliju i ostavite odmoriti.
U medjuvremenu, stavite oguljene i isjecene jabuke dinstati sa 1 K vode i ostalim sastojcima za fil. Kuhajte dok ne omeksa, ali pazite da se ne raspadne.
Ukljucite rernu i pripremite pleh za pitu.
Podijelite tijesto na 2 lopte, vecu i manju. Razvaljajte na krugove. Veci krug stavite u pleh, na njega stavite fil, pa prekrijte manjim krugom tijesta. Ivice slijepite pritiskom prstiju. Premazite povrsinu pite sa vodom, pa pospite secerom. Pecite 25-30 minuta na 180*C, ili dok pita ne porumeni. Uzivajte dok je jos topla.

'Lazy' Apple Pie


Another recipe from my first cookbook, which is more than 30 years old.

Ingredients:
'Lazy' dough-
280 g flour
200 g butter, cold small pieces
1/3 cup warm milk
1 teas sugar
1 teas yeast
pinch of salt
2 egg yolks
2 tbs sour cream
zest of 1/2 lemon
Filling-
7-8 apples, grated
1/2 cup sugar
1 teas cinnamon
1 tbs semolina
Dusting-
1/3 cup icing sugar
1 teas cinnamon
Method:
Dough-
First mix milk, sugar, salt and yeast. Set aside.
Rub flour and butter (or use food processor) with your fingers, add milk mixture, and the rest of ingredients and knead a soft dough. Divide into 2, dust with flour, cover and leave it rest for 20-30 minutes.
Preheat oven to 180*C, prepare a tin (20 X 30 cm).
Filling-
Grate apples. Squeeze excess juice. Before putting apples onto dough, you'll add sugar and cinnamon and mix well.
Roll out 1/2 of the dough into a rectangle, which is going to cover bottom of your tin. Sprinkle the top with semolina. Place grated apples mixture on, press slightly. Cover with another 1/2 of dough, which you have rolled out. Pierce the top with a fork and bake for 30 minutes, or until golden brown.
Dust with sugar / cinnamon icing.


Lijena Pita od Jabuka

Jos jedan recept iz moje famozne 'stare' sveske.

Potrebno:
Tijesto-
280 gr brasna
200 gr hladnog maslaca, isjeckanog
1 k secera
1 k kvasca
prstohvat soli
2 zumanca
2 K kajmaka / milerama
ribana korica 1/2 limuna
Punjenje-
7-8 jabuka, rendanih
1/2 solje secera
1 k cimeta
1 K griza
Posip-
1/3 solje secera u prahu
1 k cimeta
Nacin:
Najprije pomijesajte mlijeko sa soli, secerom i kvascem. Ostavite po strani.
Utrljajte komadice maslaca u brasno sa vrhovima prstiju (ili uz pomoc el. sjeckalice), pomijesajte sve sastojke za tijesto i umijesite. Podijelite na 2 dijela. Ostavite pokriveno na toplome 20-30 min.
Ukljucite rernu i pripremite pleh (20 X 30 cm).
Izrendajte jabuke. Iscijedite suvisan sok. Prije stavljanja na tijesto, pomijesacete ih sa secerom i cimetom.
Razvaljajte tijesto na velicinu pleha. Postavite na dno, pa prekrijte jabukama. Pritisnite blago. Razvaljajte i drugu polovicu tijesta, postavite po jabukama i izbodite viljuskom. Pecite 30 minuta.
Peceno posuti mjesavinom secera u prahu i cimeta.

Apple (Cheese and Cherries) Strudel



Some of my lovely followers asked for 'Apple Strudel' recipe. Here it is!

Ingredients:
Pastry-
1,5 cup flour
1 egg
pinch of salt
1 tbs oil
water enough to make 150 ml fluid - read instructions
Filing-
1 kg apples (green), peeled, cored and grated
1/3 cup sugar (white or brown)
1/2 teas cinnamon
1/3 cup Sultanas (optional)
2-3 tbs biscuit (or bread) crumbs
125 g melted butter
(for cheese/cherry version you'll need
400g Ricotta
1 egg
1/3 cup sugar
1 cup Cherries
1 tbs corn flour)
Method:
Sift the flour into a bowl, add salt. Break the egg in a measuring cup, beat and then top up with water, making up 150 ml of egg/water liquid. Pour into flour, add oil and quickly mix everything together. Take out on a floured surface and knead until smooth; use flour all the time. Dust with flour on both sides and cover with a clean cloth. Let it rest for 25-30 minutes.
Meanwhile, prepare surface for pastry and filings.
Cover large surface (dinner table) with a clean cloth, dust with flour.
Grate apples, set aside (for cheese/cherry strudel: mix 400-500 g ricotta with 1 egg and 1/3 cup sugar and 1 cup cherries+ 1 tbs corn flour).
After 1/2 hour of resting, dust dough with flour and roll out to 50-60 cm in diameter. Spoon 3-4 tbs of melted butter (not hot), and spread with your fingertips.
Now, with your palms (or backhands) try to stretch the dough as much as possible - a little at a time, going around all the time. Don't worry if the dough breaks.
On one side of the dough spoon the apples, which you have slightly squeezed out. Spoon sugar and cinnamon, sprinkle with crumbs. Pour some more melted butter all around the pastry and filing. Start rolling (lifting the cloth) to the other end. Place strudel in an buttered dish, brush some melted butter on top and bake for 25-30minutes ion 180*C. (if you're making cheese strudel use your filing instead of apples.
When baked, sprinkle with icing sugar (optional). Enjoy!




Štrudla sa Jabukama (ili sirom i višnjama)

Potrebno:
Tijesto-
1,5 solja brasna (250ml)
malo soli
1 jaje
vode toliko da sa jajetom napravite 150 ml tekucine (vidi objasnjsnje)
1 kasika ulja
Punjenje-
1 kg jabuka, ociscenih i rendanih
1/3 solje secera
1/2 kasicice cimeta
2-3 kasike mrvica keksa (ili hljeba/kruha)
1/3 solje grozdjica (po zelji)
(za sir/visnje verziju
400 gr sira
1 jaje
1/3 solje secera
1 kasika gustina / brasna)
Nacin:
Prosijte brasno, dodajte malo soli. Umutite jaje, naspite na njega toliko vode da imate 150 ml tecnosti. Dodajte ulje pa ovime umijesite mekano tijesto.
Pospite brasnom, pa ostavite pokrivenoodmarati oko 30 min.
Pripremite punjenje. Izrendajte jabuke, ostavite po strani(ili umijesajte sve sastojke za sir/visnje verziju).
Pripremite povrsinu za rad - na cist stolnjak nanesite brasno.
Razvaljajte tijesto do velicine 50-60 cm u precniku. Nanesite 3-4 kasike otopljenog maslaca (ne smije biti vreo). Razmazite po povrsini koristeci vase vrhove prstiju. Pocnite rukama razvlaciti tijesto od sredine prema krajevima, malo po malo i ideci u krug.
Na jednu stranu tijesta nanesite svoje punjenje. Ako radite sa jabukama: pospite malo mrvica, iscijedite blago jabuke, nanesite, pospite secerom i cimetom i ostatkom mrvica.
Ako radite sa sirom: pomijesajte sve namirnice zajedno i nanesite.
Poprskajte tijesto i punjenje sa maslacem pa pocnite savijati prema drugoj strani (moze uz pomoc stolnjaka). Prebacite u posudu za pecenje, premazite maslacem i pecite na 180*C oko 25-30 minuta. Malo prohladjeno, pospite secerom u prahu i uzivajte!

Apple and Poppy Seed Galette



From Eric Kayser's book 'New French recipes'.
I was slightly disappointed with this, as pictures in his book show a lot more of apple/poppy seed filing. Next time I will double the apple/poppy seed mixture!

Ingredients:
3 green apples
65 g poppy seeds
2 tbs butter
1/2 cup brown sugar
1 egg
2 sheets of puff pastry (250g)
Method:
Melt butter in a saucepan, add poppy seeds and fry them a minute. Add sugar and peeled and cored apples. Cover and cook for for 15 min.
Preheat the oven to 190*C.
Prepare a baking tray, cover with baking paper.
Cut 2 circles out of puff pastry (in original recipe it was 30 cm diameter; I did 25 cm). Place one circle on a tray, brush edges with a beaten egg. Spoon apple/poppy seeds mixture, and cover with another circle of puff pastry (make incisions in the top pastry half way trough). Press the edges, and brush with the egg.
Bake for 30 minutes.



Jabuke i mak u lisnatom tijestu

Napominjem da je ovo originalan recept; sljedeci put cu definitivno staviti duplu mjeru fila!

Potrebno:
3 zelene jabuke, oguljene i isjeckane
65 gr maka
2 kasike putera
1/2 solje (110gr) braon secera
1 jaje
2 lista lisnatog tijesta

Metod:
Proprziti mak na puteru, dodati secer i jabuke, poklopiti i dinstati 15 min.
Ukljuciti rernu na 190*C. Pripremiti pleh, obloziti papirom.
Izrezati 2 kruga u lisnatom tijestu (30cm po originalnom, 25 cm po mom nacinu).
Staviti jedan krug na pleh, krajeve premazati umucenim jajetom. Istresti fil, ostaviti 1cm bez fila oko ruba. Poklopiti sa drugim krugom tijesta, koje ste prethodno 'izrezbarili' za efekat. Pritisnuti krajeve prstima da se slijepe.
Premazati jajetom i peci 30 min.

Apple, Date and Caramel Cake



I love baking cakes...but I usually don't eat them.
This is one of exceptions!

Ingredients:
2 medium apples, peeled, cored and chopped
200g finely chopped dates
1 teas baking soda
1 cup boiling water
125 g unsalted butter, soft
1 cup caster sugar
1 egg
1 1/2 teas vanilla essence
1 cup flour
1/2 cup SR flour
pinch of salt
50 g roasted nuts (your choice), chopped
Topping:
120ml milk
90 g butter
3/4 cup brown sugar
1 teas vanilla
110 g nuts, flaked

Method:
preheat oven to 180*C. Prepare a 22 cm cake tin.
Place apples, dates, soda and boiling water in a saucepan, bring to boil and let cool.
Beat butter and sugar, mix in vanilla and egg; sift flour and salt, fold in with apples mixture and nuts. Spoon into cake tin.
Bake for 50-60 minutes.
10 minutes before the cake is ready prepare the topping-
Heat milk and butter in a saucepan, add vanilla sugar and nuts and cook for 5-8 minutes.
When cake is ready take out, flatten the top and pour the topping over it.
Return to oven for 10-15 minutes, until the topping is golden brown.
Serve with cream (optional!).




Karamel torta sa jabukama i datulama

Potrebno:
2 jabuke srednje velicine, sjeckane
200 gr datula, sjeckanih
1 kasicica sode bb
1 solja vrele vode
125 gr putera, omeksalog
1 solja sitnog secera
1 jaje
1 1/2 kasicica vanile
1 solja brasna
1/2 solje samodizajuceg brasna
malo soli
50 gr oraha/ljesnika/badema (po izboru)
Preliv:
120ml mlijeka
90 gr putera
3/4 solje braon secera
1 kasicica vanile
110gr oraha, krupno sjeckani

Nacin:
Zagrijte rernu na 180*C. Pripremite 22 cm obruc za torte.
Stavite isjeckanu jabuku, datule i sodu bb u posudu, prelijte vrelom vodom i prokuhajte. Ohladite.
Mutite puter sa secerom, dodajte vanilu i jaje. Dodajte brasno,orahe, so i mjesavinu sa jabukama.
Prerucite u obruc i pecite 50-60 minuta.
Zadnjih 10 minuta pecenja pripremite preliv - Zagrijte mlijeko i puter, dodajte secer,vanilu i orahe i kuhajte 5-8 minuta, dok se malo ne zgusne.
Izvadite tortu iz rerne,malo zaravnajte povrsinu, prelijte karamel prelivom i vratite na jos 10-15 minuta u rernu.
Mozete sluziti sa kremom ili bez, po vasem izboru!
