Oatmeal pancakes (for a special diet)


Vegetarian, Paleo, Low GI, No Carb, Gluten free, Ph diet...they drive me crazy!
You find out that, for example, oats are good for lowering cholesterol, but on another site you find out that eating oats is rising your blood ph, and therefore not good for inflammations and pains in your body.
After researching what should I eat for my 'conditions' (I'm healthy, but feel the action of hormones...at certain age you do!), here is conclusion:
- red meat (for iron), but avoid it for healthy colon,
- oats for managing cholesterol, but avoid it for acidic blood,
- dried fruit  (prunes, apricots) for healthy digestion, but avoid them for preservatives (migraine),
- walnuts and salmon for omega oils (joints), but they're acidizing
After all eliminations, only food left for me to eat is CELERY! Ridiculous! I'm not dieting!
These pancakes are result of my research (I feel much better after eating them!)

Ingredients:
1 large egg
pinch of salt
1 cup milk
3/4 cup oat meal (grounded instant oats can be used)
1/2 cup plain flour
1/2 cup water (add more for thinner pancakes)
a drop if vanilla
-oil spray for cooking (sliced bananas if using)

Method:
Beat egg, add salt and half of milk. Mix well, then add flour. Stir vigorously, then pour the rest of milk and water. Mix into a smooth runny paste.
Heat non stick pan, spray with oil. Pour 1/3 cup of mixture onto pan. (At this point put sliced bananas on top if using them).Cook for 20-30 seconds then flip and cook other side for 10-15 seconds. Serve with honey / jam / other fruit / nutella / maple syrup...



Zobene palačinke (za specijalnu dijetu)

Vegatarijanska, Paleoliticka, Niski GI, Bez glutenska, Ph dijeta...Izludjuju me!
Na jednom sajtu pronadjem, na primjer, da je zob dobra za snizavanje kolesterola, na drugom sajtu, da zob nije dobra za ph level krvi, znaci izaziva inflamacije i bolove u tijelu.
Nakon par pokusaja da istrazim sta bih ja trebala jesti za moje 'patnje' (nisam bolesna, ali povremeno osjecam hormonalne promjene...sto se desava u odredjeno doba kod svih nas),evo mog zakljucka:
- crveno meso dobro za zeljezo, ali izbjegavati jer nije dobro za probavu (kolon),
- zob smanjuje lose masnoce, ali je izuzetno acidan,
- suseno voce (sljive, kajsije) odlicno za regulisanje probave, ali sadrze konzervanse (izaziva migrene),
- orasi i losos odlicni za omega ulja (dobro za zglobove), ali su acidni u organizmu.
Nakon svih eliminacija, ispalo je da mi preostaje jesti iskljucivo celer (jer za njega nisam nista protivrjecno pronasla). Gluposti! Ja ne idem ni na kakvu dijetu!
Ovi 'pancakes' su rezultat moga istrazivanja; osjecam se puno bolje nakon konzumacije istih!

Potrebno:
1 vece jaje
malo soli
1 solja mlijeka
3/4 solje brasna od zobi (mozete samljeti pahuljice)
1/2 solje brasna obicnog
1/2 solje vode (dodajte vise za tanje palacinke)
malo vanile
- ulje za przenje (izrezana banana -po zelji)

Nacin:
Umutite jaje sa solju i pola mlijeka. Dodajte oba brasna, izmijesajte snazno, zatim ubacite ostatak mlijeka i vodu. Dobro promijesajte dok nije sasvim izjednaceno.
Zargijte neprijanjajucu tavu sa minimalno ulja i uspite 1/3 solje od pripremljene mase. Pecite 20-30 sekundi (ako zelite, dodajte izrezane banane na povrsinu). Okrenite  i pecite jos 10-15 sekundi. Sluzite sa  medom / nutelom / drugim vocem / dzemom...

Peanut Butter Truffles


These truffles are healthy-ones. They contain  no cholesterol and no added sugar, they're gluten free and made with oats (which helps lowering bad cholesterol) and flaxseed (linseed), which is rich in omega-3 fatty acids. Made for my darling who is fighting high cholesterol (but my sons almost ate them all). Oh,..no cooking / baking involved! 

Ingredients:
1 cup peanut butter*
2-3 tbs honey
2 tbs flaxseed, grounded 
2 tbs dessicated coconut 
1 cup instant (rolled) oats
-cocoa, coconut, crushed peanut for coating - optional 
Method:
Warm peanut butter (I microwaved it for 45 seconds), add honey and mix well. Add all other ingredients, fold in until incorporated. Take a tbsp at a time and roll between your hands. Coat with chosen ingredients and refrigerate; ready after 20 minutes.

 Peanut butter's is high in fat content; but most all of its fats are of the healthy monounsaturated type, which lowers "bad" LDL cholesterol levels. Peanut butter also contains polyunsaturated fats, which raises "good" HDL cholesterol levels. The synergy of both these types of fat in peanut butter makes it a good food choice for regulating your cholesterol at a healthy level.



 Kuglice sa Kikiriki Puterom

Ovo su zdrave kuglice; ne sadrzavaju kolesterol i secer, bez glutena su i sadrzavaju zob/jecam (pomaze snizavanju kolesterola) i sjeme lana, koje je bogato sa omega-3 masnim kiselinama. Napravljeno za mog dragog, koji se bori protiv povisenog kolesterola (ali moji sinovi su ih najvise pojeli). A da,..ne pece se i ne kuha!

Sastojci:
1 solja maslaca od kikirikija
2-3 K meda
2 K lanenog sjemena, samljevenog
2 K kokosa
1 solja instant zobi (presovane pahuljice)
-kakao, kokos, samljeveni kikiriki za uvaljati - po zelji
Nacin:
Zagrijte maslac (ja sam ga stvaila u mikrovalnu na 45 sekundi), umijesajte dobro med. Dodajte ostale sastojke i dobro promijesajte. Uzimajte po 1 kasiku ove mase i oblikujte u kuglice, zatim uvaljajte i odabranu masu. Rashladite u frizideru na 20-ak minuta prije sluzenja.

Anzac Biscuits and Choco-Mint Slice




ANZAC biscuits - My favorite biscuits!
During World War I, the wives, mothers and girlfriends of the Australian soldiers were concerned for the nutritional value of the food being supplied to their men, because all the food has to be sent by ships, which took long time to reach them.
It has been claimed that special nutritious biscuits were created and sent abroad because the ingredients do not spoil easily and the biscuits kept well during naval transportation.
ANZAC means Australia and New Zealand Army Corps

Ingredients:
1 cup flour
1 cup Instant oats
1 cup desiccated coconut
3/4 cup sugar
125 g melted butter
1 tbs Golden syrup
1 Teas Baking soda
3 Tbs boiling water
Method:
Preheat oven to 180*C, line a baking sheet with silicon paper.
Put all dry ingredients (except soda)into a big bowl. In a smaller bowl mix butter, water, golden syrup and soda. Mix all ingredients together. Take a spoonful of mixture, shape into a circle and bake 10-12 min, or until golden brown.
Keep in a dry, cool place for a month.

Choco-Mint Slices

(from The Australian Women's Weekly Cookbook)

Ingredients:
Base-
125 g butter
1,5 tbs cocoa
1/2 cup caster sugar
1 egg
1 cup coconut
1/2 cup walnuts, finely chopped
250 g plain biscuits (wheatmeal, milk coffee or similar)
Topping-
60 g vegetable shortening (Copha)
2 cups icing sugar
3 tbs milk
1 teas mint essence
1 drop green food colour (optional)
Choco topping-
185 g dark chocolate
60 g butter
Method:
Crush biscuits finely. Combine butter, cocoa and sugar. Heat and stir in a saucepan until melted and blended. Cool slightly. Stir in beaten egg and the rest of base ingredients. Press into a paper-lined tin (33X25cm). Refrigerate.
Melt shortening, add sugar milk and essence. Mix well. Spread over the base. Refrigerate. Melt chocolate and butter, mix well; spread over mint. Refrigerate until solid. Cut into small slices and serve.



Anzak Kolačići

Ovi kolacici su kreirani od strane majki, supruga i djevojaka Australije i Novog Zelanda tokom I svjetskog rata, za vojnike koji su bili daleko od kuce. Obzirom da je sva hrana putovala brodom, trebalo je pronaci nesto hranjivo i dugotrajno, za njihove najdraze.

Sastojci:
1 solja brasna
1 solja zobenih pahuljica
1 solja kokosa
3/4 solje secera
125 gr maslaca, istopljenog
1 K (Golden) zlatnog sirupa
1 k sode BB
3 K kljucale vode
Nacin:
Ukljucite rernu, stavite papir za pecenje preko pleha.
Stavite sve suhe sastojke (osim sode) u vecu posudu; Pomijesajte maslac i ostale sastojke u manju posudu. Sastavite sve zajedno i promijesajte. Oblikujte kolacice okruglom kasikom i pecite 10-12 minuta, ili dok ne postanu zlatno-zuti.
Cuvati do 1 mjesec na hladnom i suhom mjestu.

Čoko-Mint Kocke

Sastojci:
Osnova-
125 gr maslaca
1,5 K kakaoa
1/2 solje sitnog secera
1 jaje
1 solja kokosa
1/2 solje sitno sjeckanih oraha
250 gr keksa (petit beure ili sl.)
Premaz-
60 gr tvrde masti biljnog porijekla (Copha)
(mislim da je to 'puter' od palme) Margarin moze zamijeniti
3 K mlijeka
2 solje secera u prahu 1 k mint extrakta
1 kap zelene boje (po zelji)
Coko-premaz-
185 gr tamne cokolade
30 gr maslaca
Nacin:
Sameljite kekse. Zagrijte maslac sa secerom, dodajte kakao i dobro promijesajte. Malo prohladite pa ubacite ostale sastojke za osnovu. Dobro promijesajte i utisnite u kalup (33x25cm)koji ste prekrili papirom ili folijom. Ostavite u frizider.
Zagrijte Copha (margarin) dodjte secer , mlijeko i mint. Dobro promijesajte. Premazite bazu sa ovom smjesom i vratite u frizider. Istopite cokoladu i maslac, promijesajte i ovime premazite mint sloj. Rashladit, izrezite na manje kocke i sluzite.

Date and Oat Crumb Squares


Another quick and easy dessert.

Ingredients:
-Crust
185 g oats (flakes)
185 g flour 185 g brown sugar
1 teas cinnamon
1/2 teas baking soda
50 g walnuts, chopped
225 g butter, cut into small pieces (cold,from fridge)
-Filling
500 g dates, chopped
185 g brown sugar
150 ml water
1 teas vanilla
Method:
First make filling. Put all ingredients into a saucepan and cook until soft.
For crust, process all dry ingredients, add cold pieces of butter and process until crumbs form. Spread half of this into a slice pan (20 x 30 cm), press slightly with spoon or your hand. On top of this spread filling, then follow with another half of crumbly mixture. Bake 20 minutes at 160*C in a fan forced oven.


Datule i Zob u Kockama

Potrebno:
-za 'korice'
185 gr zobi (presovane pahuljice)
185 gr brasna
185 gr braon secera
1 kasicica cimeta
1/2 kasicice sode BB
50 gr sjeckanih oraha
225 gr putera, hladnog, sjeckanog
-za fil
500 gr datula
185 gr braon secera
150 ml vode 1 kasicica vanile
Nacin:
Najprije napravite fil, tako sto cete sve sastojke staviti u serpu i poklopljeno kuhati dok ne omeksa.
Za kore, sve sastojke osim putera pomijesajte, zatim dodajte puter i vrhovima prstiju trljajte dok se ne formiraju mrvice. Elektricna sjeckalica je idealna za ovo, ukoliko je imate. Polovinu ove smjese istresite na tepsiju (20 x 30 cm), pritisnite blago rukama ili kasikom. Preko ovoga istresite datule, pa onda drugu polovinu zobenog tijesta. Pecite 20 minuta na 160 -170 *C.
