Burnt Butter Brown Sugar Cupcakes



Ingredients:
For the Cupcakes-
150g unsalted butter
125g self raising flour
60g golden caster sugar
65g brown sugar
2 large eggs
1 teaspoon vanilla extract
1 teaspoon baking powder
2-3 tablespoons milk
For the Icing-
200 g cream cheese, softened.
60 g butter, softened
1 cup icing sugar
1 teas vanilla
(or your favorite icing)
Method:
Put butter in a saucepan, heat and stir until it starts burning (caramelised parts will become brown). Cool slightly, then sieve and let solidify (but not hardened).
Preheat the oven to 180*C, prepare 12 hole muffin tin.
Beat eggs with sugar and vanilla, until fluffy. Add butter (medium speed), and then alternately add flour (with baking powder) and milk. Do not over beat.
Pour into tins and bake for 12-15 minutes, or until golden brown.
For icing - Beat all ingredients together until smooth. Spread on top of each cupcake; decorate as you wish.

'Cupcakes' sa Sagorenim Maslacem i Braon Šećerom

Potrebno:
150 gr maslaca
125 gr samodizajuceg brasna
60 gr 'zlatnog' sitnog secera
65 gr braon secera
2 vecih jaja
1 kasicica vanila
1 kasicica praska za pecivo
2-3 kasike mlijeka
Za premazati-
200 gr krem sira, omeksalog
60 gr maslaca, omeksalog
1 solja secera u prahu
1 kasicica vanile
(ili krem po vasem izboru)
Nacin:
Najprije 'sagorite' maslac. Na srednje jakoj vatri zagrijte maslac do kljucanja (uz stalno mijesanje); kada postane mirisno i zlatno zute boje, skinite sa vatre. Malo prohladite, a zatim ocijedite necistocu iz maslaca. Ostavite ga da se malo stisne (ne previse).
Zagrijte rernu na 180*c, pripremite 'Muffin' modle.
Pjenasto izmiksajte jaja sa secerom i vanilom, dodajte maslac (sporija brzina miksera), a zatim i brasno (sa praskom) i mlijeko naizmjenicno. Pazite da ga ne 'preradite'.
Uspite u modle i pecite 12-15 minuta ili dok ne dobiju zlatno-zutu boju.
Za premaz- Mikserom izmijesajte sve sastojke, dok ne dobijete glatku masu. Premazite svaki 'cake' i ukrasite po zelji.

Chicken Fajitas


Another popular Mexican dish!

Ingredients:
1/2 kg chicken breast or thigh fillets, sliced in strips
2 tbs olive oil
1/2 lime, juice only
1 teas cumin powder
1/2 teas oregano powder
1/2 teas chilli powder
2-3 garlic cloves, crushed
Salt and pepper to taste
1 tbs oil, extra
1 onion, sliced
1 large capsicum, sliced
1 small bunch of coriander
8 corn tortillas
Grated cheese(optional)
Guacamole, or diced avocado (optional)
Method:
Mix oil, lime juice, chilli powder, cumin, oregano, garlic, salt and pepper, and meat. Marinate chicken in the fridge for 30 minutes at least. Grill or pan fry the chicken over medium-high heat until cooked. (Reserve the marinade.)
Heat the oil in a pan. Saute the onions until tender. Add capsicum and the remaining marinade and saute until the peppers are tender, about 5-7 minutes.
Remove from heat and mix in the coriander and chicken.
On each tortilla put some of chicken mix, avocado, cheese...roll and enjoy!

'Fajita'(Fahita) sa piletinom

Potrebno:
1/2 kg pilecih prsa ili karabataka, isjeceno na 'prutice'
2 kasike maslinovog ulja
sok od 1/2 limete
1 kasicica kima u prahu
1/2 kasicice oregana prah
1/2 kasicice chili praha
2-3 cena protisnutob bijelog luka
so i biber prema ukusu
1 kasika ulja, dodatno
1 crvrni luk, isjeckan
1 velika paprika, isjecena
1 mali svezanj korijandera, lisce
8 tortilja
Rendani tvrdi sir (po zelji)
gvakamola ili sjeckan avokado (po zelji)
Nacin:
Pomijesajte ulje, sok limete, chili i ostale zacine sa mesom. Ostavite u frizider na najmanje pola sata. Ispecite meso na grilu ili na tavi, marinadu rezervisite.
Zagrijte preostalo ulje, proprzite luk, dodajte papriku; dinstajte oko 5 minuta. Skinite sa vatre, pa dodajte korijander i meso.
Na savku tortilju stavite malo mjesavine sa mesom, avokado i sir ako zelite i zamotajte. Prijatno!

Grilled Salmon with Basil Pesto




Ingredients:
4 salmon fillets (or other fish), skin on
salt, pepper, olive oil
4-5 tbs Basil Pesto, to serve
Salad / vegetable to serve
Method:
Salt and Pepper salmon, brush with olive oil. Pan fry, grill or BBQ - skin side first, until done - 3-5 minutes each side, depending on thickness (mine was BBQ-ed).
Arrange on plate, next to chosen salad.
Add 1 tbs of water to pesto, mix well. Pour over fillets and a bit over your salad.
Enjoy!


Losos sa roštilja, sa Pestom od Bosiljka

Potrebno:
4 fileta lososa (ili druge ribe)
so, biber i maslinovo ulje
4-5 kasika Pesta od Bosiljka, za servirati
Salata / povrce za servirati
Metod:
Posolite i pobiberite losose, premazite ih uljem. Pecite na tavi, grilu ili rostilju - strana sa kožom prvo; obicno treba 3-5 minuta za svaku stranu, u ovisnosti o debljini fileta.
Postavite na tanjir, zajedno sa salatom / povrcem.
U pesto dodajte 1 kasiku vode, pomijesajte. Prelijte preko lososa i malo preko povrca. Uzivajte!

Pasta Salad



...Or how to avoid real cooking on 42*C! Choose any fresh, caned or frozen vegetables, that you have in fridge / pantry.

Ingredients:
500 g pasta, your choice
1,5 cups frozen beans
3 eggs
1 can (large) of your favorite tuna, drained
1 large carrot, grated
1 Spanish onion, cut into rings
1 cup black olives, pitted
salt, freshly grinded black pepper
olive oil
Method:
Cook pasta, eggs and beans in same pot until pasta al-dente. Drain, shell the eggs, chop them and with all other ingredients add them to pasta. Mix well, season to your liking and drizzle with some olive oil.

Salata sa tjesteninom
...za brzinski rucak, sa minimalno truda

Potrebno:
500 gr tjestenine, po vasem izboru
1,5 solja mahuna/boranije, smrznute (ili iz konzerve / svjeze)
3 jaja
1 konzerva (veca) tune, ocijedjena
1 velika mrkva, rendana na krupno
1 ljubicasti luk, sjecen na kolutove
1 solja crnih maslina, bez kospica
so, svjeze mljeveni crni biber
maslinovo ulje
Nacin:
Skuhajte tjesteninu, jaja i mahune u istoj vodi dok tjestenina ne bude gotova. Ocijedite. Ocistite jaja i izreziteih, ubacite u tjesteninu. Dodajte ostale sastojke i zacinite solju i biberom. Pospite maslinovim uljem.

Mexican Baked Beans


All Wonderful flavors of Mexico in one dish!

Ingredients:
1/2 kg Borlotti beans
bay leaf, peppercorns, salt
2 tbs oil
2 onions, diced
3-4 garlic cloves, crushed
2 tbs paprika, smoked preferably
1 chilli, sliced
1 yellow capsicum, strips and dices
1 large carrot, diced
300 g speck, 6 thick slices + rest of it diced
2 teas cumin powder
1/2 teas oregano powder
1 potato, grated
salt, pepper, 'Vegeta' (veg. stock powder)
3-4 Chorizo sausages
Method:
Cook beans with salt, pepper and a bay leaf, until soft, but whole. (Presoaking overnight will help a lot, or using a pressure cooker.) Drain.
Heat oil in a large pot, fry onions, diced speck, carrot, diced capsicum and chilli. Add spices, then beans and 1-1,5 cups water. Cook for 1/2 an hour. Grate potato and check the taste.
Preheat oven to 200*C, oil an dish.
Spoon beans mixture into the oven dish, arrange sausages (halved lenghtwise), paprika strips and speck on top; sprinkle with paprika. Bake for 15-20 minutes, or until thick and sausages baked.

Meksički Zapečeni Grah / Pasulj

Potrebno:
1/2 kg graha/pasulja 'Šarenac'
lovorov list, biber u zrnu i so
2 kasike ulja
2 crvena luka, sjeckana
3-4 cena bijelog luka, protisnuta
2 kasike crvene paprike, dimljene po mogucnosti
1 ljuta papricica, izrezana
1 zuta paprika, isjecena na prutice + kockice
1 veca mrkva, isjecena na kocke
300 gr mesnate slanine. isjecena na 6 reznjeva , ostatak na kockice
2 kasicice kima u prahu
1/2 kasicice origana u prehu
1 krompir, rendani
so, biber, Vegeta
3-4 Chorizo kobasica (moze i Kranjske, ali je ukus drugaciji)
Nacin:
Skuhajte grah sa biberom, solju i lovorom. Ocijedite.
Zagrijte ulje u vecoj serpi, proprzite luk, mrkvu, slaninu i papriku (kockice samo). Nakon nekoliko minuta ubacite zacine, grah i zalijte sa 1 (+)soljom vode. Kuhajte oko 1/2 sata, zatim dodajte izrendani krompir i provjerite ukus.
Zagrijte rernu na 200*C, nauljite tepsiju.
Istresite grah u tepsiju, poredajte raspolovljene kobasice, prutice paprike i slaninu na povrsinu, pospite tucanom paprikom. Pecite 15-20 minuta, ili dok kobasice ne porumene, a grah se stisne.

Garlic Prawns and Crispy Bass Fillets



I'm back! After some 'disconnection with the rest of World' I finally got a better Internet provider. Happy!


Ingredients:
Fillets-
4 Bass fillets (or others), fresh or frozen (must be well defrosted)
1 egg, beaten
corn flour, fine
salt, pepper to taste
oil for frying
Prawns-
500 g shelled prawns
2 cloves garlic, crushed
3 tbs olive oil
1 chilli, optional
salt
Method:
First make marinade for prawns - mix all ingredients, add prawns. Stir and shake until well coated. Set aside.
Heat oil for frying. Salt and pepper fillets, dip into beaten egg, then into corn flour. Fry for a few minutes each side, until golden and crispy. Drain on paper towel.
Discard oil from pan, wipe well with paper towel. Heat pan, then pour prawns into it together with marinade. Shake and toss until prawns turn red. Serve immediately.

Škampe / Kozice sa bijelim lukom i Riblji fileti u Kukuruznom Brašnu

Potrebno:
Fileti-
4 fileta , svjeza ili smrznuta (odmrznuti prvo naravno)
1 jaje, umuceno
kukuruzno brasno sitno
so i biber
ulje za przenje
Kozice-
500 gr ociscenih kozica
2 cena bijelog luka, zdrobljena
3 kasike maslinovog ulja
1 chili (po zelji)
so
Nacin:
Najprije marinirajte kozice; sve sastojke dobro promijesajte i ostavite po strani.
Zagrijte ulje.
Uvaljajte zacinjenu ribu u jaje, zatim u kukuruzno brasno. Przite sa svake strane po nekoliko minuta, dok ne porumeni. Ocijedite na papirnoj salveti.
Izbacite ulje, obrisite tavu, zagrijte je, pa ubacite kozice zajedno sa marinadom. Przite i treskajte tavu dok kozice ne pocrvene. Servirajte odmah.

Beans and Corn Salad with Capsicum and Onion


The heat of summer has arrived in my City, and that means I will spend as little time cooking/baking as possible. Meals will mostly consist of combined ingredients and BBQ. One of 'combined-ones' is this salad; it contains complete protein and good carbs, so it is all-in-one meal. Perfect for vegetarians. It takes 5 minutes to make it.

Ingredients:
2 cans of red kidney beans
1 can of corn
1 Capsicum, red, diced
1-2 Spanish onions, diced
2-3 tbs olive oil
1-2 tbs Balsamic Vinegar
salt and pepper to taste
Method:
Drain cans; combine all ingredients, mix well. Season according to your taste.

Grah/pasulj i kukuruz salata sa paprikom i lukom

Kada vrucine nastupe u mom gradu, uglavnom izbjegavam da kuham. cesto se obroci sastoje od 'kombiniranja' namirnica. Ova salata ima sve neophodne nutricionalne vrijednosti u jednom, a gotova je za svega 5 minuta.

Potrebno:
2 konzerve crvenog graha
1 konzerva kukuruza
1 crvena paprika, mesnata, iskockana
1-2 Spanska (ljubicasta ) luka, iskockana
2-3 kasike maslinovog ulja
1-2 kasike Balzamickog sirceta
so i biber prema ukusu
Nacin:
Ocijedite konzerve. Pomijesajte sve sastojke; dotjerajte ukus.
